My twin brother and I
Monday Night Burritos
About this Cook
I am 23 years old, and just recently have I really got into cooking. It quickly became something I can't get enough of. I work at a health food and supplement store, so im glad to be so crazy about my health at such a young age. I feel I can make serious changes to my future by changing my diet NOW. I am an outgoing person with a love for tattoos, video games and my boyfriend.
My favorite things to cook
With the love of my boyfriend, Blake, comes the love for cooking Asian food. He is 1/2 Japanese and 1/2 American so he loves EVERYTHING. I would have to say my VERY favorite thing to cook is vegetables. I know, sounds lame, but they really are the best things for us and I love every single one of them. So why not eat them ALL the time!?
My favorite family cooking traditions
My mom was a single mom with three children, two of which were twins, and a full time job (High Five MOM!). So I have very few memories of my mom and I actually cooking together, but thats what makes the ones I do have so much more special. I always helped with Holidays. Being a single mom, when we did holidays at our house, she was on her own. I hope I helped her then, but im so happy for how much I can help her now. I guess the fact that she married a chef does help a little too ;)
My cooking triumphs
Like I said, I just in this last year started cooking ALL the time. So honestly, anything that comes out great is a triumph for me. No lie, I still get overwhelmed with excitement just having a fantastic meal that I made!
My cooking tragedies
I'm not a great baker...Baking alone is sort of at tragedy at the moment.

Angel Food Cake Roll
I made this for my boyfriend's birthday. He said he wanted Angel Food cake so I wanted to do something different. I only had one shot at it, so I decided to make it as a layer cake instead. The flavor and amazing-ness was in the frosting. Everyone loved it because it wasn't a heavy and overly sweet frosting. You could literally eat gobs of it at a time and just want more. I used a fruit-on-the-bottom yogurt and topped the cake with halved strawberries. I also served it with a berry only fruit salad with a pineapple-sugar glaze. YUMMY! Looked beautiful too!

Sweet Potato Pie IV
This pie was great! I brought it to our Labor Day weekend family picnic and brought home an empty pie plate. Everyone loved it. My sister even snagged the last two pieces to bring home to her father-in-law since he couldn't make it that day. I was nervous it might be too much of a fall desert for labor day, but I was wrong. It was perfect, but also perfect for Fall!

Black Bean Rice Burgers
I originally went looking for a recipe like this because I really enjoy the Black Bean and Rice burgers they serve @ Ruby Tuesdays. I get tired of veggie burgers, and honestly there are not many I like anyway. These I thought were great. They are a little mushy and can be a little difficult to work with, but very very tasty.
