Baked Oatmeal II

Reviewed: Mar. 4, 2014
I used egg substitute (1/2 c) and applesauce in place of the butter. My guys (DH and 3 grown sons) loved it! Thanks, BLANCHL!

Little Meat Loaves

Reviewed: Nov. 13, 2013
Delicious! This will be my go-to meatloaf recipe. I added fresh basil, scallions, and spring onions from my garden and a good sprinkling of cayenne. Using ketchup seems strange perhaps, but it is quite delicious this way.

The Best Lemon Bars

Reviewed: Nov. 3, 2013
I found that the bars were better the second day. The first day, I could taste the flour in the lemon filling. Big turnoff. Two stars. The next day, pure lemon yumminess! Five stars. (I used 1/2 c. lemon juice and zest in the crust and the filling.)

Carrot Casserole

Reviewed: Jan. 19, 2013
My husband thought these were simply delicious. My changes: didn't add a bread topping and I stirred in some dill.

Guinness® Corned Beef

Reviewed: Mar. 17, 2008
This was the best corned beef I've ever eaten! My only problem was what to do with the extra bottles of beer.

Turkey Enchiladas

Reviewed: Nov. 25, 2007
My family loved these. I omitted the onion and added a generous sprinkling of cumin. My non-Turkey eaters gobbled these up!

Army SOS Creamed Ground Beef

Reviewed: Oct. 6, 2007
A good basic recipe that is great when kicked up a notch: cook meat with a diced onion, fresh mushrooms sauteed in butter and garlic, sour cream, etc.

Best Apple Crisp Ever

Reviewed: Feb. 13, 2005
Absolutely delicious! I used granny smiths and let them sit in the brown sugar for a few minutes and then sprinkled some nutmeg over the top and stirred. The top did get hard after cooling off. I served it upside down and topped with whipped cream.

Southern Peach Cobbler

Reviewed: Feb. 13, 2005
Very good. I would have liked more of the cobbler. The texture was good. I used lite peaches, but I think the heavy syrup would have been better.

Chai Tea Mix

Reviewed: Feb. 6, 2005
I forgot to add the white pepper and nutmeg, but it was excellent without it. Otherwise, I followed the instructions exactly, blended using a food processor. So easy and so fast! A definite winner.

Raspberry Mousse Cheesecake

Reviewed: Dec. 31, 2004
Very tasty and very pretty. When cut, the pie displays several layers - the cream topping, the raspberry preserves formed a second layer after chilling, the cheesecake, and then the crust. Next time, I'll spread the mousse layer more smoothly and garnish with fresh raspberries and mint leaves.

Egg and Hash Brown Pie

Reviewed: Dec. 25, 2004
Very, very good. I used a little seasoning salt and black pepper, but still needs a little kick of something.
