Basic Cheese Polenta

Really quite good...And So many possibilities for variations with different cheeses. Very easy too. I sliced mine into 3/4 inch slices then cut them in half. then I dredged them in seasoned flour and fried the pieces in butter till golden brown....Served it under Pork chops Italiano.......Fantastic! Will definitely pass this one along.

Filipino Lumpia

I had some mini lumpias at a get together years ago and loved them. so when I saw this recipe I just had to try it. It worked like a charm. After the first two, wrapping was easy. Instead of frying them I sprayed them with Pam and cooked them in a small convection oven till a light golden color. Everyone loved them. I got about twenty-five out of the batch. Now I freeze them in layers, in an airthight container separated by sprayed wax paper. Whenever I want, I just pop a couple into the conv Oven and use them as sides with stir fry or even with with a nice bowl of noodles in broth. A great recipe for finger food parties.

Traditional Osso Buco

Veal shanks are hard to find and pricey so I substituted Beef shanks. Otherwise everything was pretty much the way the recipe directs. It was so tender and the marrow adds so much beefiness to the flavor . I served it on a bed of rice and nothing else. It was killer. I made enough for ten people and Everyone wanted to know how to make it.

Three Cheese Noodle Bake

Have made it twice. I will add it to my "recipes to repeat" binder. I always add a little more cheese than recipes call for but then, I'm a cheese freak. We used no yolk egg noodles and it worked out just great. Its filling too, so a small portion goes a long way.

Sour Cream Chocolate Frosting

This frosting was unbelievable! The recipe yielded enough frosting to fill and frost a 9X13 cake cut in half and stacked into two layers. I was pleasantly surprised at how nicely it firmed up, in the fridge, while remaining creamy. We could not stop eating it. I even substituted fat free sour cream to lighten it up a little.
