About this Cook
Busy mom and career woman who loves quick fixes for work nights and complicated gourmet for company.
My favorite things to cook
Anything that turns out fabulous.. lol..
My favorite family cooking traditions
Making gingerbread cookies with the kids at Christmas. We make up several colors of egg yolk icing and the kids get really creative. We never have enough to give away because we eat them all!
My cooking triumphs
The carrot wedding cake I made for my brother's wedding! I found the recipe and the frosting from and it was a hit.
My cooking tragedies
I made brownies for my high school class. I knew enough to poke a toothpick in the center of cakes to tell if they were done but not enough to know that the rule does not apply to brownies. I baked them for an hour and a half and broke a knife cutting them. I was so sad!

Throw Together Mexican Casserole
let's see.. I almost always change a recipe up, just because I use what I have on hand, which was 2 packages of Knorr Spanish Rice in a bag. Added great flavor and I still added the salsa. Family loved it with shredded cheddar on top.

Hamburger Pie
Made this for dinner last night and my family RAVED! There are four of us and everyone (including the super-picky teenage girl) had seconds. I did use real mashed potatoes, made with butter and whole milk. The flavor of instant just isn't the same and my family complains every time I try to use it. The only substitutions were 1 can tomato soup and 1 can diced tomatoes (because I didn't have 2 cans of soup), undrained. Also, I have an italian spice mix that I threw in a teaspoon(ish) of. I also added a teaspoon(ish) of minced garlic while sauteing. Sea salt and cracked pepper, of course. I tend to always spice things up, so that does not affect how I rate a recipe.
