Quinoa and Black Beans

I LOVE this recipe and will eat it hot or cold. I have had it with and without the cilantro but if you are going to have leftovers, leave out the cilantro and just add a bit right before you eat it, adds that bit of fresh to leftovers.

Baked Beans II

I have been using this as my go-to recipe for baked beans and always gotten rave reviews. I am not sure why people think they are "runny"...there is no expectation on beans with that regard just give them a taste and you will see. I do use apple cider vinegar over red wine vinegar as I usually have that on hand and I don't usually need to add much salt and pepper since I use pepper bacon and chop it up right into the beans. YUMMY!

Delicious Ham and Potato Soup

This is a great recipe! I have made it with ham and one time with BACON!!! THe version with bacon is a fav with my kids...no adjustments needed. If you are using bacon though I would not add additional salt as it's not needed. Make sure the bacon is cooked ahead of time and crumbled. I cut it before I cook it and saute in a pan.

Slow Cooker Lentil and Ham Soup

Delish and even better the next day...I used all broth and added about 1 cup more and it was still a fairly thick soup. I doubled this and used 16oz tomato sauce.

Classic Macaroni Salad

This recipe was the first one I used and the first time I made homemade macaroni salad. I will never stray from this recipe although I will use whatever veggies I have on hand if I don't have time to run to the store.

Savory Herb Rice

This was GREAT and so simple. I had to make some changes to accomadate what I had on hand. I used Olive Oil instead of butter. I omitted the soy sauce and the dried minced onion (I added a little bit more onion powder). I used Oregano in place of the marjoram and poultry seasoning in place of the thyme and I added 1/2 tsp of granulated garlic. My three year old ate it all and said it was great! This will be a keeper!

Great-Aunt Nina's Noodles and Chicken

This is delish, my family asks for it all the time (hubby and three kids). I think it's important to use a pinot grigio. I also used store bought noodles but I definately want to make my own when I have more time. I am not a fan of cooked carrots so I left all the veggies big, while shredding the chicken, I didn't return the veggies and it was GOOD!!! I think you NEED to use a whole chicken since the bones add more flavor. I usually start it in the morning before I go to work and just cook the noodles when I get home, great home cooked meal on a work night.

Terry's Texas Pinto Beans

his recipe produced delicious results. I didn't add the jalapeno as my kids don't like spicy food and it was still delicious. I mashed some and created refried beans, served in tortillas with rice and cheese and everyone ate every last bite. I cooked in the slow-cooker on low for 8 hours, delish. I will make this again!
