Sausage and Egg Casserole

Reviewed: Jun. 21, 2010
Wonderful. Used 8 eggs, as suggested by previous reviews for a 9x13 dish, and also used sourdough sliced bread that I cubed. Sauteed some sliced red bell pepper in the oil left over from browning the sausage and let the sausage and pepper drain on paper towels before adding to dish. Really easy to prepare and LOVE that it's made the night before -- great timesaver! Absolutely delicious and can't wait to make it again!

Maple Banana Bread

Reviewed: Jun. 21, 2010
Made this recipe into muffins for Father's Day brunch, and they received rave reviews! The only change I made (since I didn't have any ripe bananas and had to use ones a little on the unripened side, which yielded less of that good banana sweetness) was to add some light brown sugar to my tasting and some chopped pecans. Baked them at 350 for 25 mins. Moist, delicious muffins!

The Best Lemon Bars

Reviewed: May 3, 2010
These were great..a little too sweet for me, but everyone else disagreed with me and said they were just perfect. I added about 1/4 tsp salt to the crust and had to bake the crust a little longer than recipe states. I will definitely make these again using a tad less sugar.

Slow Cooker Pork

Reviewed: Apr. 19, 2010
Can't wait for leftovers tonight! Everyone loved it :) I also used 1/3 cup of water with a small bit of chicken boullion added in, one taco seasoning packet and some garlic powder along with the chili powder. I left out the red pepper flakes for the kids. Next time, however, I think I'll try this without adding any liquid...the pork seemed to yield enough of its own juices. I took the pork out of the pot and onto a cutting board to pull it apart and remove any remaining fat. Then I added the meat back in to simmer with the juices. Really excellent! Thank you so much for sharing this recipe :)

The Best Meatloaf I've Ever Made

Reviewed: Apr. 12, 2010
Oh wow, this was awesome! I had to improvise slightly with what I had on hand, but just two small changes: Used plain stuffing cubes I had in the freezer in place of the toasted bread and used condensed tomato bisque soup in place of the tomato sauce (added a little less water to the soup than usual to keep it saucy and then used the 15 oz called for in the recipe; also used the soup to coat the top the last 15 mins of cooking). Pressed some whole stuffing cubes into the bottom of the loaf to help soak up some of the juices. This tasted soooo good! Thank you for the recipe!

Slow Cooker Split Pea Sausage Soup

Reviewed: Apr. 7, 2010
This turned out wonderfully! Used leftover ham instead of the sausage, 8 cups of water as suggested in previous reviews with two large boullion cubes quartered and substituted oregano (none on hand) with italian seasoning. Tossed in some peppercorns as well. Set on low for 8 hours in the crock and came home to dinner..Thank you for the recipe :)

Spinach Stuffed Chicken Breasts

Reviewed: Mar. 30, 2010
Made this for dinner last night, and it was absolutely delicious! I seasoned the chicken with garlic power and S&P after stuffed and ready to go in the dish. I was a little hesitant about the mayo in the filling, but was pleasantly surprised in the end. This was awesome!

Tomato Chicken Parmesan

Tasted very good, and I would make this again, although I'll be sure to pound out the chicken breasts next time to make them a little thinner.

Golden Rum Cake

Reviewed: Mar. 8, 2010
Came out delicious! Two changes I made (I had to improvise with what I had on hand). I used white rum and a small drop of almond extract in place of the rum in the glaze (this was personal preference). Really moist and delicious cake. Thank you for the recipe!

Pecan Pie V

Reviewed: Feb. 2, 2010
Excellent and easy pie! I agree with a previous poster that without the use of syrup, it doesn't taste like candy and tastes like pie :) I made one for Christmas (for 5 people) It was devoured..no leftovers, so made a second the day after Christmas :)

Laura's Quick Slow Cooker Turkey Chili

Reviewed: Feb. 2, 2010
This was excellent! Left out allspice (didn't have any) and used pickled jalapenos in place of pepper flakes (didn't have those either). Added small can of enchilada sauce and then a small can of corn towards the end. Really yummy!
