Cherry Pie III

This was a great pie recipe. I made a few changes from the start. I did use my own crust recipe. I also used half tart, half sweet cherries and I really liked the balance. Though next time I will add an extra teaspoon or two of corn starch as the pie didn't set up as well as I had hoped. Maybe I need to let it simmer longer. I will definitely make more cherry pies with this recipe as the base!

Best Beef Dip Ever

This was really great!!! My husband usually doesn't like meat done in a slow cooker because it can be dry. This was not!!! I did add a few teaspoons of beef base to it as it cooked. I made it the day before, shredded the meat and removed the fat, then put in the refrigerator over night. I took it out the next afternoon and pulled off the fat that had come to the top. I reheated if for 2-3 hours, served on french rolls with provolone. Excellent!!! Will definitely be making this again!!!

Pumpkin Gingerbread

Excellent recipe!! I made them into mini-muffins and mini-loaves. My girls aren't huge pumpkin fans ( I make a lot of pumpkin things because of our garden, I freeze my own pumpkin puree), BUT they can't stay out of these! They are already begging me to pack them in their snack bags for school! Thanks!

Refried Beans Without the Refry

Snow Angel Ice Cream

This ice cream is fabulous!! It tastes like real homemade ice cream!! We didn't have strawberries so it was just vanilla but it was excellent and we will definitely be making this again and again!! It will be a fun, easy tradition!! Thanks for sharing the recipe!!

Red, White, and Green Pizza

I loved this pizza!! I can't wait to try it with the artichokes!! I did a few things different. I mixed in some fresh, frozen basil into the ricotta/Parmesan mixture. I did not use frozen spinach, since I had fresh and I chopped a few handfuls and sprinkled it on top of the ricotta/parm after putting that in the prepared crust. I did use a mixture of Italian cheeses and sprinkled the top with oregano. Very tasty!!

Roasted Herb Chicken and Potatoes

This was an absolutely fabulous, easy recipe!!! My husband couldn't wait for dinner because it smelled amazing when cooking!!! And my kids, ages 7 & 4, who NEVER eat roasted potatoes unless there is bacon and a ton of cheese involved, both had thirds!! We had NO leftovers!!

Chicken Rotini Stovetop Casserole

Pretty good, and I will make this again. I did make changes after reading reviews. Half way through cooking the chicken I added 3 diced scallions, a dash of garlic powder, 1/3 cup diced red and green pepper (pre-sauteed, that I keep in the freezer), and 1 1/2 cups chopped broccoli. I also generously seasoned the chicken with salt and pepper. Very tasty, my husband doesn't like casseroles, ate 2 huge helpings!!!

Stuffed Tomato Basil Chicken

Fabulous!!!! I used a shredded Italian cheese mix, because that's what I had on hand. After baking I transferred the chicken to a plate and drained the drippings into a small saucepan. I added about a tablespoon of flour and 1/2 cup of cream and whisked to make a sauce. I totally forgot about the parmesan at the end. This turned out excellent and will definitely make again!!

Greek Island Chicken Shish Kebabs

this had very good flavor!! I just sliced the chicken breasts horizontally to make them thinner, then marinated for a few hours and put on the grill. Excellent! I made a sandwich the next day by putting a leftover piece of chicken on a french roll and toasting it, added some fresh tomato and a little basil. yummy! will definitely make again!!

Pesto Chicken Penne Casserole

Very tasty!! I made my own pesto and only used half of what was called for. The recipe called for what I thought a lot of chicken, I had 2 grilled chicken breast leftover from the night before and just cut into small pieces. Also I only used about half the cheese blend, just seemed like a lot for 1 box of pasta. I also diced 2 fresh tomatoes, because that's what I had on hand. It's in the oven baking right now, but have been tasting along the way and will definitely make again!!!! I can't wait for dinner!!

Chicken Parmigiana

Great base recipe!! I used 1/4 c each bread crumbs and panko, added a few shakes of parm, oregano, basil, and garlic, too taste. After coating and placing on baking sheet, I drizzled with melted butter. Turned out perfect!

Grilled Chicken with Herbs

My husband really liked this! I did cut back on the Balsamic vinegar to 1/4 cup, also used dry herbs at 1 tsp for 1 Tbl, and heaping 1/4 tsp for 1 tsp. Marinated almost 3 hours and they grilled perfect!!

Streusel Strawberry Pizza

This was fabulous! Following other suggestions, I added a dash of vanilla and fresh strawberries to the pie filling, also brown sugar and cinnamon to the streusel. It got rave reviews at our family gathering! Will definitely be making this again and I think I will try other pie fillings as well!

Split Pea Soup

I thought this was a great starter recipe as well! I cooked a few slices of chopped bacon and sauteed the onion with the bacon before adding to the soup. I also use thyme instead of the marjoram (I didn't have any) and threw in a few bay leaves. Excellent soup will make again!
