Apple Pie by Grandma Ople
I baked this yesterday for Thanksgiving, and I don't know what happened, but the pie came out incredibly tart, even though I followed the directions exactly. I used 4 Granny Smith apples, 2 Yellow Delicious apples, and 2 Gala apples. I added cinnamon and nutmeg to the syrup, then mixed 3/4's of it with the apples, using the rest to pour over the lattice crust. Everybody loved the crust, but didn't flip over the filling. After tasting it myself, I agreed. The filling was tender and perfectly cooked, but way too tart, as if there wasn't enough syrup. I'm going to try it one more time, since it's gotten so many rave reviews, but this time maybe I'll double the syrup, or change the mix/ratio of apples. By the way, the pie was beautiful when it came out of the oven, but as it cooled, the apples sunk and the lattice crust stayed up, like a cage, which has never happened with any lattice pie I've ever made. Obviously, I botched everything up on this one! LOL

Burger or Hot Dog Buns
OK, I let these rise for the 30-35 minutes mentioned in the recipe directions. NOT RNOUGH TIME. I figured maybe they would rise and puff up more in the oven, but they really didn't. I was a little baffled that the directions didn't call for a first rise, then a second when shaped, like most breads...but I wanted to do it exactly as written. Big mistake. I should have read the reviews first, as I would have given them two 1 hour rising times. The taste is great, it's just a shame that I ended up with small skinny hotdog buns. Next time I'll extend the rising time twice.

Creamy Cinnamon Rice Pudding
This is by far the closest I have ever come to what you get in diners. Super duper creamy and rich. I used arborio rice, and I 'also' cut the recipe in half to 6 servings. I used only 1 1/2 tsp of cinnamon, then added a little vanilla at the end. Highly recommended, Very yummy!
