Unsloppy Joes

This recipe was easy and turned out pretty well. I love the vinegar in it, it definitely gives it a "meatier" flavor. I found it a little bit uninteresting in flavor, I think it needed a little salt (maybe if you use salted beans it works out?). Anyhow, that mostly just MY salt addiction talking! It was fine- a bit like a vinegary vegetarian chili. I made a couple changes- out of necessity, I used canned black beans instead of kidney beans. I think the texture of kidney beans would have been better, but the black beans were nice, too. A also reduced the amount of chili powder as many reviewers suggested- I wish I hadn't! I kept tasting and adding more and more. Different chili powders have different levels of heat! I used a blend of two types of chili powder, one that is incredibly mild with a nice chili flavor, and an ancho chile one that is spicier. My joe mix wasn't very spicy at all... I don't know of some of the reviewers are sensitive to spice or something, because I would have had to use a pretty hot chili powder to make it too spicy to enjoy. A teaspoon of black pepper also didn't really add much heat. Anyhow, know your chili powder, and add the full amount if it is a milder one, or reduce the amount if you're using a hot powder. (And don't accidentally use Cayenne chili powder- that'll probably burn your mouth right off if you use much of it!)

Grandma Ople's Apple Pie

This apple pie was delicious and simple, and pouring the caramel over the lattice top crust made it absolutely gorgeous and golden. Everyone loved it!

Banana Bread VIII

Ohh, lovely. I couldn't resist tweaking (added some walnuts and semi-sweet chocolate chips) and I had to use whole wheat and applesauce since that's all I had on hand... I can only guess that if I hadn't done that it would have only been sweeter and more tender! Excellent simple recipe! Took well over and hour to bake, though!

Vegan Agave Cornbread Muffins

Oh, my, goodness. I made these and they were HEAVENLY. I doubled the recipe and made it in an 8x8, and had to substitute pastry flour for regular whole wheat flour and agave for real maple syrup, so I'm not sure how changed it is from it's original form... But... Wow. Wonderful cornbread!

Honey Dijon Balsamic Vinaigrette

Simple, perfect as it is, but easily adjustable for preference. Mine tasted wonderful right after mixing, but now it's sitting in the fridge, and I can't wait to taste it in a few hours. :)

World's Best Vegan Pancakes

I thought these were pretty good! I can't really say how they'd have turned out if I'd had self-rising flour... Instead I used whole wheat flour, and to substitute for the custard powder (as Timothy suggested) I used corn flour and salt. I also added some vanilla and cinammon. The ones I didn't burn tasted very nice! They were very hearty tasting... I bet that was because I used whole wheat. (Oh, and I substituted baking powder for baking soda and lemon juice! They still bubbled up, but I bet baking powder would make them lighter.)

Fabulous Oatmeal-Bran Cake

This is such an easy recipe! I found all the ingredients in my very poorly stocked kitchen, and added a few spices to suit my taste. Since it's just me and the boyfriend over here, I scaled down to 12 muffins, and added 1/4 tsps of nutmeg, allspice, and vanilla extract. I also used unsweetened instant oatmeal, because that's all I had on hand. To try to make up the texture deficit from using softer oats, I added sliced almond and raisins from my breakfast-cereal topping stash. Excellently tasty! I just really recommend spicing up with whatever you have on hand... Otherwise these could get a little TOO simple.
