Chocolate Chip Banana Bread II

This is an outstanding recipe that is not to sweet and very moist. If you don't have mayo try cream cheese or sour cream same great results.

Chewy Coconut Cookies

This recipe is outstanding just as is. The cookies are nice and flat, store easily for transport to school or church as they are chewy and flexible. I have in the past added a bit more vanilla, and tried the chocolate stripe on top. But nothing beats just the plain cookie as the recipe calls. YUM

Southwestern Chicken Lasagna

Excellent flavors. Agree with other reviewers moisten the bottom tortilla layers. Also I increased the jalapenos and substituted one additional cup of salsa for the second can of tomato sauce. Simmered for 30 mins to enhance.

Great classic recipe. I substituted ground turkey and it still turned out fantastic. Easy and serves lots. Throw in a salad and presto meal. It is easily frozen and reheated.

Easy Lovely Lemon Chicken

This is a fantastic and easy recipe. The flavors are subtle and a little amount of curry goes a long way. I also added a bit of grated ginger as well to add a different flavor. You can also make this with chicken breasts, or thighs and legs to reduce prep time in cutting up the chicken. Any way you make it, excellent!

Cucumber and Blue Cheese Salad

This is an easy and yummy salad especially for those who don't love lettuce. Be sure not to dress it until the last minute as the vinegar can start to break down the veggies. This is outstanding with Indian or spicy main dishes as it has a cooling effect. Great every time!

Beth's Spicy Oatmeal Raisin Cookies

Outstanding oatmeal cookie. This is not a traditional thick heavy oatmeal cookie. The batter is light and it is better to make these cookies no more than teaspoon sized as recommended. They do burn easily but be sure to cook them through otherwise they just fall apart. Golden brown is a good description. Do not overdo the cloves or cinnamon, the amounts are good as this is a very light cookie. Always gets rave reviews.

Big Soft Ginger Cookies

While these cookies taste good, had some trouble with the recipe. Made according to the recipe the batter was so sticky couldn't roll into balls. So I added more flour, almost a cup more so I could work with the dough. Also had to increase cooking time to 11 minutes and they didn't fall all the way down. But they tasted great and were nice and fluffy.

Award Winning Soft Chocolate Chip Cookies

I thought these cookies were okay only. The dough seems dry and they don't have a lot of flavor when done cooking. If I make them again I will reduce the amount of pudding, as I think this is double the number of packages and is perhaps what makes them dry. They are very light when baked and fluffy, but I don't get a chewy sensation at all.

Pasta Primavera with Italian Turkey Sausage

This recipe has fantastic flavors and is relatively easy to make. After making this a few times, it is also very flexible around what types of veggies to use. If the zucchini and squash are not available a multi colored pepper mix works well. I do not add the pasta into the skillet, but use it as a base and put the rest on top, keeps the pasta from getting soggy, particularly for leftovers. It does make great leftovers. I also increase the red pepper flakes and added oregano to the basil for more flavor. Family favorite.

Indian Tandoori Chicken

This recipe tastes amazing and is simpler than it looks to make. I use prepackaged chicken thighs which are just the right moisture and thickness to grill up well. The flavors are subtle in the marinade but come through nicely when cooked. Be sure to use a higher grill temp to get the crispy outside texture. It makes the grill messy but is outstanding. It is also great for leftovers. Family favorite.

Red, White and Blue Strawberry Shortcake

Great and easy recipe. I took the suggestion of another reviewer and used chocolate cake. EXCELLENT. The taste of chocolate cake and cool whip with the berries is excellent. Be sure to cut the strawberries consistently to ensure the rows are even.
