This recipe has fantastic flavors and is relatively easy to make. After making this a few times, it is also very flexible around what types of veggies to use. If the zucchini and squash are not available a multi colored pepper mix works well. I do not add the pasta into the skillet, but use it as a base and put the rest on top, keeps the pasta from getting soggy, particularly for leftovers. It does make great leftovers. I also increase the red pepper flakes and added oregano to the basil for more flavor. Family favorite.
