Candied Almonds

My husband came home with a three pound bag of almonds from Costco and I was thinking what ever will I do with this! I tried this recipe and it was quick and easy. I thought it was very good but I would like to add a little vanilla next time and maybe brown sugar. I felt like it was missing a little something but I will definately use it again. Atleast now I can use up some of those nuts!

Martha's Vegetable Beef Soup

I do make quite a few changes to this soup. First, I use Beef Stock instead of water. I use ground turkey instead of beef, and I add one can of rinsed Kidney beans and one chopped up potato. I substituted diced tomatoes for stewed. I also add indivdually my own mix of frozen veggies. After browning the meat I put it all in a Crock Pot to cook all day on low. Definately put it on High for 4-5 hours if you can't cook it all day. The longer it cooks the better.

Fried Sweet Potatoes

The bettern name for these are candied sweet potatoes. These remind me of the ones my mom made growing up. I thought they were easy and good. I used two large sweet potatoes boiled for 5 minutes and cut them up into 1/2 slices like in the picture. I used 1/4 cup butter and 14/ cup brown sugar and that was perfect. I added a little salt at the end.

Turkey Avocado Panini

I was out of avocado and Red Peppers but it was wonderful anyway. I never made my own Panini and I am proud I now have a recipe. Can't wait to try it again with the avocado and peppers. I am sure it will be even better.

Slow Cooker Italian Chicken Alfredo

I felt the dish needed more spice to it which is why I gave it 3 stars. My daughter liked it without any added seasonings but for my husband and I added some Tony Chachere's Creole Seasonings and for my husband who likes things really spicy I even added a few shakes of Cayenne Pepper.

Shrimp Etouffee II

Yum! This is a keeper! I only gave it 4 stars because I changed it slightly. It definatley needed 4 or 5 shakes of Worstershire Sauce and to be thinned out a little with Chicken Broth. Other than that I thought the heat was great. I actually added Tabasco for my husband because he likes it super hot. I also made it stovetop in a sauce pan since I don't really like cooking things in a microwave and it worked out great. I also used cooked shrimp and put them in the sauce to warm them up at the end. My only complaint is that there wasn't enough. I will try to double this recipe next time.

Fish Roll-Ups

My husband who is very picky liked this alot so I will make it again. I used very fresh Tiliapia and instead of rolling it up I spread it on top of each fish. I thought it would be too much since I only had 3 Tilapia fillets but it worked out. I had some left over but I am glad I made the full recipe. I also used shredded Parmasan instead of grated.

Stir-Fried Rice

My daughter loves this recipe. Easy simple and delicious. I tend to use whatever veggies are on hand. I love to use peas and sliced carrots. I only use 2 eggs and scramble them in smart balance butter. Make sure you use minute rice instead of the other quick rices. I used the 10 minute boil in the bag rice and I had to cook it longer.

Shrimp and Asparagus Fettuccine

I cooked this a little bit differently than called for. I used smart balance instead of olive oil. I steamed the aparagus and addedit to the melted Smart Balance and garlic. I added the Old Bay Seasonings directly into this mixture of garlic, added cooked shrimp and then tossed in the noodles. I thought it was good.

Honey Baked Chicken II

Was skeptical at first but it turned out delicious. I made it exactly as the recipe directed. My son who never eats anything gobbled up the chicken. My daughter liked it as well. This is one I will keep and make again. Very easy and smells wonderful when cooking.

Chicken Pasta II

I wasn't as excited about this dish as the others who have written about it. I felt it needed more flavor. I did not use wine as I did not have any but instead used chicken broth. I also used petite diced tomatoes as others had suggested. It was OK.. I had to add more seasonings to it- Salt, pepper, garlic and cayenne pepper. I think if I do this again I will use wine and real tomatoes. If you have the ingredients on hand and are looking for something to throw together than I would suggest it. I would not go out of my way to make it again.

Quick and Easy Shrimp Fajitas

A nice change of pace from the traditional chicken fajitas. I did marinate the shrimp for about an hour in lime juice and garlic. I also added a little of the taco seasoning and chopped garic to the green peppers and onions while they were cooking. Like previous reviews I didn't use all of the taco seasoning( probably a little more than half) I used Old El Paso. Everyone liked them and will probably make again. I topped them with sour cream and shredded cheddar cheese.

Slow-Cooker Pepper Steak
