Scallops Florentine

I was in the mood for scallops today but never knew how to cook them properly. I found this recipe and it looked easy to make so I decided to give it a go. I used water instead of wine or broth. I already had sauteed spinach in my fridge (cooked previously in some EVOO so I didn't measure out spinach). I also used regular 1% milk instead of the f.f. evaporated milk. I decided to throw in some grape tomatos at the same time I threw the spinach in the pan. The dish was DELICIOUS and easy to make. I will certainly be making it again in the near future. It's very diet friendly, too!

Gingerbread Men

My son was begging me to make gingerbread cookies with him (he has tried pepperidge farm gingerbread cookies and liked them) but I didn't want to cook something too spicy and him not eat them. These are the perfect cross between gingerbread and sugar. Super easy to make. My only complaint about cookies like the chilling/rolling/cutting/re-chilling leftover pieces/recutting/rechilling...... process. I'm covered in flour by the end of it all. I cooked mine for 7 minutes. I did roll the dough out thin but didn't measure. They're about 1/8 inch. I also doubled the batch and used a small cookie cutter to make sure I had enough because they're going quick and we haven't even frosted them yet!!

Dreamy Nighttime Drink

Perfect! I came on to allrecipes this Saturday night because I was in the mood for a cozy drink. I typed in "drinks" and this recipe was one of the first ones on the list that popped up. I sounded just like what I wanted. I just made 3 cups (1 for me and 1 for each of my sons). It's a hit. Love the dash of vanilla!

Strawberry Oatmeal Breakfast Smoothie

Really great smoothie. After all the smoothies I've made, never would have thought to add oatmeal. I just put regular oatmeal in my blender to make it powdery fine first before making the smoothie. Don't bother adding any sugar, the fruit makes it sweet enough. I did add a handful of spinach though.

G's Flank Steak Marinade

I was looking for a great marinade for my flank steak. The only changes I made were using garlic powder and onion powder instead of the actual garlic and onion (chalk it up to being lazy). I marinated my partially frozen flank steak for 9 hours and cooked it under the broiler in my oven. It came out SOOO good, by far the best I've had. Even my VERY picky kids enjoyed it.

Baked Kale Chips

I came to allrecipes to find a fish recipe. As the website came up, the Baked Kale Chips recipe was right on the front page. I clicked on it right away because I bought a ton of Kale yesterday for my green smoothies (and was glad to know there was something to use kale in other than my smoothies). I already made the chips as a side for lunch and they were SUPER. I warned my mom in advance that lunch was all experimental and she shockingly enjoyed the chips, too. I washed the kale, shook it out and dried with a paper towel. Because I didn't have parchment paper, I just put them right on a cookie sheet. They were done in about 11 minutes. The kale is easy to over salt so be careful.

Easy Slow Cooker French Dip

I was desperate for a crock pot roast recipe. I've made traditional pot roasts in the past and have always been let down. I also needed a recipe based on what was in my pantry so I chose this one. It's so easy but, more importantly, super yummy. Even my SUPER PICKY 9 year old (who fought me over having to eat this) ate two helpings of this and requested it again two nights later. I did serve it on plates with side dishes and not on bread and I also added garlic powder and Worcestershire Sauce to the pot before cooking. I also turned the roast once during cooking.

Eggnog Blend

Last Christmas I was looking for an easy eggnog recipe as it would be the first time I was attempting to make it. You couldn't find an easier recipe than this but, more importantly, you CANNOT find a better tasting eggnog recipe than this. I've since made it for Thanksgiving, Christmas Eve and Christmas Day this year. I didn't change one thing about it. I've gotten a friend hooked on it, too, and she made it for the first time this Christmas also.
