Stuffed Cabbage Rolls

Yum! I've never had cabbage rolls before, but had leftover cabbage from St. Patty's day that I needed to use. We'll be making these again! The only change I made was, like other reviewers, I added garlic powder and worcestershire to the meat mixture and added a can of crushed tomatoes to the sauce. I also could only fit 7 rolls in my baking dish, so I had a little bit of meat mixture left over, which I mixed into the sauce to pour over. Baked them at 350* for an hour. My three year old even ate it, cabbage and all!

Grilled Feta Tomatoes

This recipe is delicious! I made it as written, except I didn't have garlic and herb feta, just plain feta. So I added some minced garlic and herbs de provence to the feta. It was a hit for our 4th of July grillout! We will definitely be making these again!

Spicy Garlic Lime Chicken

We loved this recipe! I doubled it for more servings, but I didn't double the salt. In fact, I would probably only use 1/2 t or less of salt next time. I also only had 1 T of butter left in the butter dish so I did a 1 to 2 ratio of butter to oil in the pan. I had so much chicken that I had to cook it in two batches, so when it was all cooked I poured the drippings back in the pan, set the chicken aside, and added the garlic powder and lime juice (from two whole limes) to the drippings for the sauce. Then poured the sauce over the chicken on a platter. Wow! Our friends went back for thirds! Absolutely delicious served with rice and veggies!

Peach Muffins

This is delicious! The only changes I made were to add 1/2 cup of blueberries and 1/3 cup orange juice (because the batter seemed extremely thick) and I made it in a bundt pan instead of muffin pans (baked for 1 hour). It turned out incredibly moist and tasty! Definitely use fresh peaches if you can :)

Oatmeal Peanut Butter Cookies

These are delicious! I love the combo of oats and peanut butter. To be fair, I didn't have quite enough butter, so I made up the difference with extra shortening. I'm sure the flavor would be much better with the proper ratio of butter. I also added chocolate chips. Yummy! Other than that, I followed the recipe exactly. I found 12 minute to be the perfect cooking time for me (at sea level) and after cooling, the cookies just slid off my airbake pans. They rose slightly and didn't spread at all. The end result was a high, soft, somewhat crumbly cookie. I will definitely make these again!

Egg and Cheese Puffs

I love these! They are such a hit at my church and with my weekly mom's group. I made just a few adjustments though: I only used 12 ounces of turkey bacon (it's all I had) and I only used 2 T of melted butter. The first time I made them I used 1/2 cup butter and when they came out of the oven they were swimming in butter, so I cut it back the second time around and they were perfect! I also made them in my silicone brownie bite pans instead of muffin pans. They don't stick at all and I like that size better because it makes it easier to serve/share with a large group of people. And the bite-size leftovers freeze and reheat really well! This recipe is a keeper!
