Black Bean Turkey Burgers

I just made these for lunch and they were delicious. I used shredded mozzarella, Italian breadcrumbs and egg whites. I skipped the onion mix and just seasoned with garlic, pepper, cayenne and cumin. I'm freezing the leftovers for next week. Yum!! I cooked the burgers in a non-stick pan on low-med heat and covered for a few mins, flipped only once.

Mexican Bean and Rice Salad

I love this, I cant stop eating it. I've made this for friends at work for Cinco de Mayo. I'm not sure if I should serve this hot or cold with tortilla chips and a side of sour cream. I did omit the kidney beans and just went with black beans. Definitely use a fresh squeezed lime over the top. Delicious!!

Fried Black-Eye Peas

To make this a little healthier try cooking in Olive Oil instead of butter and veggie oil. I also used turkey bacon, an egg white to keep together and lightly dusted with flour. This will cut down on the calorie intake. Thanks for a great recipe!

Penne Pasta with Spinach and Bacon

This was a great recipe! I made this for myself for lunch minus the bacon(I dont eat beef or pork). I also used wheat pasta, fresh parm and fresh parsley. I'll try zucchini next time. YUM!!!

Bean Relish

I just made this with White Cannellini Beans(white kidney beans) because thats what I had in my pantry. I followed the rest of the recipe and added fresh chopped parsley, a little cumin and a pinch of cayenne pepper. Turned out great! cant wait for dinner to eat with turkey burgers. I think I might try with black beans, corn and cilantro. If you use a light mayonnaise and cut down on the relish, this will be less calories than shown.

Tuna and Noodle Salad Light

Loved it! I used Barilla Veggie Penne, canned tomatoes with a little of the juice and fresh parsley. I also topped with parm cheese. This is my new favorite way to eat packaged tuna. This would be great with feta cheese and black olives too. Yum!!

Turkey Veggie Meatloaf Cups

Really good! I followed most of the recipe, I added some chopped baby spinach, fresh parsley, and garlic to the meat mixture. I also made a a quick marinara sauce and added a couple of tbls to the turkey and topped each "muffin" with sauce too. I had one sweet potato that needed to be used so I mashed it up and piped on top of muffins. These are super tasty...great for a snack. If you dont have couscous just add whole wheat bread crumbs.

Espinacas con Garbanzos (Spinach with Garbanzo Beans)

Thanks Vanessa for this recipe. This is sooo good I've made it twice now. I did change/add some ingredients. I used black beans,fresh baby spinach, red bell pepper, onion, fresh cilantro, garlic, onion powder, cumin, cayenne pepper and S&P of course. I also steamed two chicken breasts cut up and added to the skillet, you might need a little liquid at the end so add chicken broth or water to loosen up. I eat all this over brown rice....delicious!!! Full of protein too.

Thanksgiving Leftover Casserole

This was great. I did make some adjustments. I used 2 cups of turkey and glad I did. Also, the sauce I made was a roux + chedder cheese (like you were making mac-n-cheese). I added thyme,rosemary,garlic powder,onion powder and lots of black pepper. This was done after 35 minutes...I think 45 mins is too long. My BF had 3 helpings! great recipe.

Sausage Pasta

We loved this recipe. I used fresh spinach and a can of basil & oregano diced tomatoes. Instead of spicy sausage I used cheese and parsley Italian sausage. I took sausage out of the casings and crumbled. I also used fresh spinach as other reviewers suggested. I will be making this again and again.

Pudding Poke Cake

I made this cake last night with choclate cake, banana pudding filler and choclate pudding for the top. It turned out pretty good. The kids loved it. I think I'll try it again and bring it to work. I work in a restaurant so plenty of critics there. Thanks for the recipe.
