Herbed Mushrooms with White Wine

Quinoa and Black Beans

This was my first time cooking quinoa. It turned out fantastic and now I am hooked. Even my husband liked this recipe - and he had his reservations at first, since it was a new thing for us. I didn't have any cumin, so I substituted chili powder instead and it turned out great. It reminded me of Mexican rice. Served it with sour cream and salsa. Soooo good! Try this recipe! You won't be disappointed.

Whole Wheat Beer Bread

Fantastic bread! Dense, moist, flavorful and slightly crunch on top. I did add about 3/4 cups of cheese, but did not change anything else. The amount of salt was just fine for us. I really love how the brown sugar gives it that hint of sweetness. I was looking for a way to use up our "non-alcoholic" Kaliber beer and this was just perfect. I think I'll make two more loaves and take them to my parents for Easter brunch.

Beer Pancakes

Fantastic tasting pancakes! My husband didn't realize that I had made these from scratch and thought I had used the Snoqualmie Falls Pancake mix. He was really surprised when I told him it wasn't and that I had made them with the Kaliber beer that was sitting in the fridge! Snoqualmie Falls is the best pancake mix ever (in my opinion) and these taste almost exactly like them. At a fraction of the cost!

Pumpkin Muffins II

Wow, these are OMG so good! I've made them twice now and frost them with cream cheese frosting. My husband and I are totally addicted to them. I don't even think they deserve to be called muffins. With the frosting, we refer to them as cupcakes. I mean, it does call for 2 CUPS of white sugar, after all. :)

Roasted Winter Squash Seeds

Awesome! So glad I found this recipe! Now every time I cut open any kind of squash, I roast the seeds in my toaster oven for a special snack. Actually, they're much better than pumpkin seeds because they're smaller and less woody. My husband and 2-year old son love them!

Strawberry Cream Cheese Spread

Wow, so much better than store-bought! I whipped this up with my immersion blender to serve with our home-made bagels. It was such a delicious treat, and so easy to make! This is definitely a keeper!

Chef John's Pumpkin Scones

These were lovely! I left out the pine nuts, since well, they're expensive and I didn't have any anyways. I added 1/2 tsp of cinnamon but next time my husband said I should add a full tsp, along with some other traditional pumpkin spices. As it was, it was just as Chef John described: not too moist, not too dry. The glaze was a nice touch. And these were even better warmed up in the toaster oven. This will become a standard recipe for using up my garden sugar pie pumpkins!

Pie Crust I

Wonderful recipe! It gets only 4 stars because I actually modified the recipe a bit... because I never cook with shortening. Instead I used 1/3 cup butter and 1/3 cup coconut oil. I only have to use 5 tablespoons of water and don't have to put it in the fridge. My mother-in-law just said it was the best crust she'd ever had.

Radish Top Soup

This recipe was a great starting point. I didn't have any potatoes, and had tons of radishes, so I substituted the radishes for the potatoes, and added about a 1/4 cup of red wine. Followed the recipe for everything else. I had my husband taste it without telling him what it was, and he was really shocked when I told him it was radish soup!
