My favorite things to cook
I love to cook everything!! Trying something new is so exciting and creating my own recipes is the most fulfilling!!! Now that my son is showing an interest in the cooking art, it's even more fun!!!
My favorite family cooking traditions
Every Thanksgiving my son and I cook a huge meal with recipes that we have created!!! Then, on Christmas Day my entire family still gathers at my parents house (we are now 25 members strong and growing) and all of the adults bring their specialty finger food!!! It gets more exciting every year as the grandchildren are now reaching adulthood and joining in the tradition!! There is usually enough food to feed an army!!
My cooking triumphs
I have created a large collection of "restaurant copy cat recipes!!" I have perfected many of them and now am asked at every catering event to bring my spinach and artichoke dip which everyone says is the best ever!!!
My cooking tragedies
I recently decided to make some garlic and onion potato wedges. I mixed up some dried garlic, onion, salt and pepper to season my potatoes with. I coated the potatoes lightly with some olive oil, then seasoned them. To prevent sticking to the pan I lined my pan with parchment paper. I cooked the potatoes and they looked and smelled wonderful!! BUT...when I went to take them off...they were stuck...like glue...to the paper!! I had used wax paper instead!! The oil and the starch from the potatoes had adhered them to the wax paper. My son picked up the paper, the potatoes remained stuck to it!! He called the recipe..."Potato Paper!!!" We shared a big laugh!!!

Campbell's(R) Slow-Cooked Pulled Pork Sandwiches
WOW!!! This was so tender and juicy. The flavor was great! I made it for my boyfriend to take in to work. All the workers raved about it and were asking him for the recipe. He was so proud to have taken in such a great dish!! I'll use this time and time again!!

Lemon Meringue Icebox Pie
This is by far the best recipe for Lemon Meringue Pie. I have also used this filling to fill the mini-fillo tart shells that you can by in the frozen food section. Just bake in the oven after they are filled for about 15 minutes...chill......then add a dollop of redi-whip right before they are served. Rave reviews every time....everyone thinks you've really slaved at making these tasty pretty tarts!!!

Slow Cooker London Broil
WOW!!! I have never had success cooking a london broil before, they always came out tough. But this was fabulous....It was falling apart and so juicy!!! Best EVER!!! My cut of meat was a bit larger than 2 lbs so I added a can of cream of celery because it was what I had on hand.....it was soooo good!!! I cooked some red potatoes and carrots in a seperate pot on the stove and added them to the crock pot for the last 30 minutes and they were heavenly, too!!! Definitely a keeper!!!!
