Carrot Cake III

This cake is awesome as is...I was going to change it basd on what others recommended, lke using half brown sugar, applesce,pineapple and stuff...but i didnt have any of it on hand so i followed the recipe exacly the way its written and the resus are amazing!! SOOO much better than the box mixes and i didnt even make the frosting--to make it a low calorie and less fat. STILL YUMMY!! i made this again today after a logn time, and i used the cream cheese frosting II on this stie by jannie. very good combo. love it. --update....using half applesauce and half oil reduces the oilyness and greasyness of the cake the next day without taking away from the taste

Country Green Beans

This recipe is simple and delicious, i love it. I make it every Thanksgiving,and in between for meals and my family eats it up. They finish this on thanksgiving before they finish any other sides...I use chicken stock, olive oil, more garlic, red onion, salt and pepper...and u have a perfect and healthy side!!!

Chocolate Chip Banana Muffins

these were REALLY good, only change i made was to use olive oil just to try to be healthy. I also used chopped walnuts instead of chocolate chips, and used a cupcake tray. It made 22 cupcake sized muffins

Portobello Mushroom Stroganoff

Very good, but i took in all the suggestions from previous reviewers. i added 2 cloves of garlic, a little soy sauce, only 1/2 cup of sour cream...no butter just olive oil to saute the onions n garlic and i used beef broth. tastes great , and easy to make

Mini Cheesecakes I

this is really good and so easy, but make sure u freeze them before serving because they taste so much better completely cooled. i halved the recipe and used only 1/4 cup sugar and also usedd 1 package of 1/3 less fat cream cheese n i couldnt tell the difference at all from when i first made them with regular cream cheese

Spanish Rice Bake

this was pretty good. some changes, made it a one pot meal, browned ground turkey in oil with onions and garlic and then i added everything else i used lots of cumin and some taco seasoning a little salsa no chili sauce and the rice cooked perfectly in abt 30 mins. stir only abt every 10 mins or so otherwise keep covered

Spanish Flan

REALLY GOOD, next time ill just leave out the sugar bc it didnt really caramelize or harden it just melted and left a really really sweet layer on the bottom that i didnt rly like. *****update--ive been making this recipe as is, but i felt it was too too sweet so i cut the condensed milk by 1/4 and it was better. it was still a little sweeter than i like so i think itll be perfect next time if i use only half the can of condensed milk. also water bath did nothing for me.

Incredibly Cheesy Turkey Meatloaf

GREAT , i loved. it with some changes from reading reviews. i halved the recipe, let the milk and breadcrumbs soak for a couple of minutes added some minced onions, cubed up cheddar cheese instead of colby some worceshetire sauce and a1 sauce. and some garlic powder it came out awesome

Easy Pancakes

i just had these SOOO GOOD and so easy, i took sugesstions n used 2 teaspons of BP and half the salt and half the sugar. i used abt 2 tsp of butter instead of oil. next time i will try with choc chips in there

Tomato-Cream Sauce for Pasta

i really liked this, and the recipe made enough for half a box of penne. i used 2 cloves of garlic and a small onion, 3/4 cup of milk because im watching my calories and fat and i also ran in through the blender really quick. i tossed the pasta with the sauce, added some parm cheese lots of italian seasoning and it came out awesome!

Black Bean and Corn Quesadillas

these were really good and easy i used a small onion and i didnt use butter at all. only a little evoo to saute the onion and i used spray cooking oil for the skillet. a good vegetarian option for when i dont feel like eating meat, or making a big huge meal ****this is an update...the sauteed onion is completely unnecessary(since salsa has onions) these are soooo yummy if you just heat up a can of black beans corn and about half cup salsa and i used a blend of mexican cheeses. Quick and delicious!!! and the family loves it too so that helps. also i left out the sugar. didnt miss it.

Banana Sour Cream Bread

this is REALLY GOOD, similiar to the choc chip banana muffins on this site which i make with walnuts. i halved the recipe, and i used about 2 tbs butter...didnt have a hand mixer so i just whisked it with 1 cup sugar..i used only 1 egg, i forgot the cinamon and half cup walnuts and used only 2 cups flour baked in 2 loaf pans at 325 for 1 hour and 10 minutes perfectly cooked!!!... i also felt like it was a little sweeter than id like so next time im goign do to 3/4 cup of sugar **UPDATE IVE MADE THIS AGAIN TODAY AFTER A WHILE** For half the recipe... I used 2 tbsp melted Smart balance butter, and 3/4 cup of sugar. I kept everything else the same, but used FAGE NONFAT YOGURT instead of sour cream...and 4 ripe bananas, and 2 cups flour. Awesome for breakfast!!

Crepes

this came out really good, betetr than crepes ive had at restaurants. and its SO easy, i dont see the need to mix in the blender...i just whisk in a bowl, and i also dotn refrigerate the mix. i use a little butter instead of oil, and use cookingspray in the pan when im making it. i just had these with some nutella, yummy.

Chicken Scampi II

i just made this, so i had to share how good it is. probably not the healthiest, but i did adjust per some reviews and did abt 3 or 4 tsp of (smart balance) butter, and maybe 2 tbsp of olive oil. i used abt 4 cloves of garlic, and around 2 tsps of italian seasoning. i also used chicken tenderloins coated in flour. i thought there wouldnt be enough sauce, but i added some bell peppers and red onions and that gave it some moisture. i cooked for abt 15-20 minutes, and theyw ere perfect. very easy, ill deff make this again. also to serve with this i made" pasta e olio" on this site

this is a really good simple recipe, i used about quarter cup olive oil, no butter...and about 4 cloves garlic and soem red pepper flakes(i didnt measure). i serve this with the chicken scampi II on this site. also i had to add lots of salt.

OMG theese are good and addicvtive, i made with whole wheat pita brushed with olvie oil salt pepper and garlic powder. i didnt have basil or that other thing. served with store bought tribe brand hummus....SOOO goooddddd
