Reviewed: Jun. 10, 2011
this is a very good and easy choc cake--does not need a frosting or glaze stays moist untilt he next day but you dotn get the little metled parts of choc chips in there like u do right after taking it out of the oven **update...hard to mess up this cake, ive adjusted to less oil, less eggs, less pudding, no choc chips...still comes out amazing. holds up well to frostings and fillings

Brooklyn Girl's Penne Arrabiata

Reviewed: Jun. 7, 2011
THIS WAS SO GOOD and so simple, i think it would be good even without the chicken. to save calories and time, i did not fry or bread the chicken i just sauteed it in some olive oil with salt pepper and italian herbs. i accidentally used stewed tomatoes and the whole can of tomato sauce and it turned out great. also i used whole wheat penne, forgot the fresh basil and instead used a mix of italian dried herbs. yummy!!

Cool Whipped Frosting

Reviewed: May 29, 2011
my family loved this i thought it was pretty good 5 stars because its really easy and really light. i don't care for frosting that's heavy and too sweet this one is perfectly a moderate amount of sweet i use it for white almond wedding cake on this site which is a dense cake so it pairs well. yes, it does taste like cool whip but thats basically what it is. im sure it would be betetr with fresh whipped cream but i dont have a hand mixer so i had to do withh coolwhip but it turned out great bc everyone loved it.

White Almond Wedding Cake

Reviewed: May 29, 2011
This cake was a HUGE hit with my family i made it for a get together and used BC white cake and followed directions exactly. only thing i omitted almond extract bc i didnt have it so i doubled vanilla and the result was fantastic. dense and moist almost everyone had second pieces. i used cool whipped topping from this site which is a lighter frosting so i thought itd be good for such a dense cake. and it was !! i will be making this regularly for birthdays and holidays **also bakign time varies i made this in two 9 inch pans and it took about 45-50 mins, and i didnt have a hand mixer so i mixed the dry and ten i mixed the wet and stirrred the wet into the dry with a whisk.

Mexican Bean Salad

Reviewed: May 21, 2011
I just made this and it was amazing! similiar to a dish ive had in a turkish restaurant called piyaz. i did everything the recipe said except i used half the olive oil and half the red wine vingear and it was just the rght amount of dressing also 1 tbsp of sugar is fine.i left out the corn bc i was trying to replicate the turkish salad which doesnt use corn.I will make this often love it . UPDATE--Ive also used this dressing on a "greek pasta salad"...rotini, tomato, cucumbers, fresh bell peppers, red onion, and feta...THE BEST!!!

Chicken Scampi II

Reviewed: May 15, 2011
i just made this, so i had to share how good it is. probably not the healthiest, but i did adjust per some reviews and did abt 3 or 4 tsp of (smart balance) butter, and maybe 2 tbsp of olive oil. i used abt 4 cloves of garlic, and around 2 tsps of italian seasoning. i also used chicken tenderloins coated in flour. i thought there wouldnt be enough sauce, but i added some bell peppers and red onions and that gave it some moisture. i cooked for abt 15-20 minutes, and theyw ere perfect. very easy, ill deff make this again. also to serve with this i made" pasta e olio" on this site

Banana Sour Cream Bread

Reviewed: Apr. 11, 2011
this is REALLY GOOD, similiar to the choc chip banana muffins on this site which i make with walnuts. i halved the recipe, and i used about 2 tbs butter...didnt have a hand mixer so i just whisked it with 1 cup sugar..i used only 1 egg, i forgot the cinamon and half cup walnuts and used only 2 cups flour baked in 2 loaf pans at 325 for 1 hour and 10 minutes perfectly cooked!!!... i also felt like it was a little sweeter than id like so next time im goign do to 3/4 cup of sugar **UPDATE IVE MADE THIS AGAIN TODAY AFTER A WHILE** For half the recipe... I used 2 tbsp melted Smart balance butter, and 3/4 cup of sugar. I kept everything else the same, but used FAGE NONFAT YOGURT instead of sour cream...and 4 ripe bananas, and 2 cups flour. Awesome for breakfast!!

Black Bean and Corn Quesadillas

Reviewed: Mar. 25, 2011
these were really good and easy i used a small onion and i didnt use butter at all. only a little evoo to saute the onion and i used spray cooking oil for the skillet. a good vegetarian option for when i dont feel like eating meat, or making a big huge meal ****this is an update...the sauteed onion is completely unnecessary(since salsa has onions) these are soooo yummy if you just heat up a can of black beans corn and about half cup salsa and i used a blend of mexican cheeses. Quick and delicious!!! and the family loves it too so that helps. also i left out the sugar. didnt miss it.
