Homesteader Cornbread

Substituted melted butter for the oil, but otherwise followed the recipe exactly. Super moist and dense. Delicious! A perfect complement to chili!

Dulcia Domestica

Definitely a super sweet treat (it's dates poached in honey, after all!), but it was so delicious! I made this with a friend and she stuffed the dates with the pine nuts, and apparently that was the hardest part about the recipe. Otherwise, it was simple, only calls for a few ingredients, and is a sweet accompaniment to a lineup of more savory bites to eat. Will make again.

Double Tomato Bruschetta

Perhaps not the most "traditional" bruschetta recipes, but it was super delicious! The sun dried tomatoes added something really special to the tomato mixture, and I loved the melted mozzarella on top. I can't think of anything about this recipe I would change, and I would DEFINITELY make this again.

Banana Pancakes II

For a no-egg buttermilk pancake recipe, this was pretty good. The pancakes turned out quite soft, and I liked the little bits of banana throughout. If you have eggs on hand, however, I think there are probably better recipes out there. Good but not great. I'd make it again if I craved pancakes and had no eggs.

White Chocolate Macadamia Nut Cookies IV

These were wonderful. I agree with the other reviews who said to cut the nuts and the chocolate in half, though - I only used about 3 oz. chopped macadamia nuts and 1 cup of white chocolate chips, and this was more than enough. The dough is fabulous and I'm sure I'll be making these again.

Blonde Brownies I

These were fabulous! I followed the recipe exactly, except I mixed 1/3 cup of the chocolate chips into the batter and sprinkled the other 1/3 cup on top. I used dark brown sugar for a deeper flavor and used a 9" round tin, since I couldn't find a square one. Only problem with this recipe is, it's hard to stop eating them!

Jay's Signature Pizza Crust

This is a decent pizza crust recipe but nothing particularly special. I had to use a lot more flour than it called for, probably a whole extra cup. The crust was very chewy, and I'd suggest adding a few seasonings to the dough if you like it flavorful. Also, if you don't like your dough extremely thick (like, focaccia bread-style thick), make sure to roll out the dough very thin before topping it.

Pakistani Spicy Chickpeas

The lemon pepper in this recipe kind of overpowered the rest of the flavors, and I didn't think the recipe was exceptionally good. A good meal to make once but that's it. It is easy to make but just doesn't quite hit the spot.

Baked Asparagus with Balsamic Butter Sauce

I'm surprised this recipe has so many rave reviews. I thought it was okay but nothing special. The sauce is decent but nothing I'd want to make time and time again - too plain, really. I'd prefer either plain asparagus or the Drunken Grilled Asparagus from this site.

Spanakopita II

This recipe is AWESOME!! Exactly what I was looking for. There is absolutely nothing that needs to be added to the recipe. However, I did cut back on the butter. 3/4 pound?? Who uses that much butter on these?? They don't need to be drenched! I used a total of probably 5 or 6 Tablespoons of butter and that was plenty. And like another reviewer, I also cut back on the eggs, from 4 to 2. Overall, the flavor is awesome. It takes some time to fold up these guys, but it's worth it. I'm planning to whip up another batch and freeze them to have on hand. Oh and about the folding: Use one sheet of phyllo dough at a time. Put the filling on one side in the middle. Fold both sides over and then "roll" up into a triangle, one sheet of phyllo per spanakopita. You only really need 1 pack of the 16 oz phyllo dough, the ones that have two bags in them.

Caramel Popcorn

Wow. This was amazing and oh so addicting!! We cut the recipe in half - which I highly recommend if you don't plan to feed an army! - and didn't add the salt to cut down on sodium. Cooking time was 45 minutes for us. The only problem: Not having enough willpower to stop eating all the kernals! What a great recipe; I'll be making this again.

Cinnamon Pancakes in a Jar

This made a fabulous gift!! Definitely use 1 1/4 cups of mix to make the batter - otherwise it'd be way too thick! And make sure to mix all the dry ingredients together instead of layering them because it's impossible to scoop out mix before mixing it. Great flavor and a wonderful gift.

Simple Tuna Melt

Uber-quick and easy to make, and tastes great to boot. Have discovered that certain brands of tuba make this filling a little more watery than desired. Bumble bee is the best brand I've found to use so far. Thanks for a great recipe!

Pita Chips

WHOAA these are addictive!! I didn't have chervil so I didn't use that but mmmmmmmmmm, no one could keep these out of their mouths! They were extremely simple to make and a good "healthy" alternative to chips. Will be making this probably on a regular basis for snack foods. DELICIOUS! Thanks for the fab recipe.

Artichoke & Spinach Dip Restaurant Style

Followed this recipe as written (though did use reduced fat cream cheese and made sure to stir the ingredients before dumping them in a pan) and it turned out wonderful. Guests loved it. Goes very well with pita chips as scoopers. Will make again when I need to bring a dip to a party. Thanks for recipe.

Cinnamon Rolls III

Yum - soo good! The dough was so light and simple to make with the bread machine. I loved the Clone of a Cinnabon recipe but tried this because it's healthier for you. Mmm - I think this is my new recipe for cinnabon!! Deeeelish!

Garlic Mashed Potatoes Secret Recipe

Had good flavor but will probably not make again. Good for a side dish though. And a word of advice : Don' use stand up mixer to mash or else potatoes will turn out gooey.

Stacked Enchilada Pie

I did not particularly enjoy this. FOr starters, it takes much longer to prepare than the recipe states - took me a full hour, and I even used pre-grated cheese! Then when it finally came out of the oven, I thought it tasted OK, but nothing that I really enjoyed eating. By the end of my serving I was wishing there wasn't more to eat. And now I have a whole ton of leftovers I'm not too happy about, but I guess I'll be eating that the rest of the week. I definitely prefer normal rolled enchiladas to this.
