Terry's Texas Pinto Beans

Great starter recipe. For our tastes it needed much more seasoning like chili powder, oregano and paprika for a true Mexican flare. Let's face it, Texans also like meat in their pintos so I added 3 fat slices of peppered bacon. I started the beans in my crockpot on high for 4 hours, the beans still weren't done. So, I boiled them in my dutch oven for an hour until tender, adding water as I went. I served them in a bowl topped with fresh onion, cilantro, jalapeno and crumbled spicy, chipotle cheese. My husband smoked a pork loin so we ate the beans charro style with street style, pork tacos! Delish! I can't wait for leftovers!

Artichoke Spinach Lasagna

Very good!!!!! I just didn't make it lasagna style because I only had whole wheat pasta. I followed the directions otherwise.....EXCEPT I used fresh chopped spinach only because it was going bad. Other than that, this recipe was good ! If you follow me- you know I double the herbs and garlic for personal taste! Yum! Very good as left overs microwaved or re-heated in the toaster oven.

Pasta Primavera with Italian Turkey Sausage

Very very good! I also finely chopped some spinach I needed to get rid of. Because I basically minced the spinach leaves, we couldn't taste it. So I would say my review is as the recipe follows. We did add a few sprinkles of mozzarella and Parmesan cheese. Perfect and quick!

Asparagus with Tomatoes

I roasted my dish instead of doing the skillet method. I used way more garlic than called for only for personal preference and added chopped onion. This went well with lemon chicken and goat cheese baked potatoes.

Lemony Mediterranean Chicken

This was a fantastic dish! The only thing we changed was we used chicken thighs with skin. My husband made a bed of lemon slices, put the seasoned chicken on top and threw in diced red potatoes and fresh string beans! It was a quick dinner and healthy. The chicken came out perfectly juicy. Although we didn't really eat the skin on the chicken, it gave great moisture to the veggies! Really great and versatile dish.

Shrimp Scampi Bake

Very easy and good recipe. The only thing I did was add 1/4 of white wine I let simmer and cook off the alcohol- then added to the pasta bake. This meshed well with all the flavors and we were able to sop up the extra "juice" with fresh french bread.

Rigatoni with Eggplant, Mushrooms and Goat Cheese

Good base recipe but for me it needed more seasoning and garlic. I left out the olives and added artichoke hearts instead, because that's what I had. I always salt my eggplant first and let it sit in the sink in a colander. This draws out the eggplant juice. The juice from an eggplant can be VERY bitter when it cooks down. I also served with whole wheat pasta like many others said. I think I may try this recipe with Italian sausage or Italian seasoned turkey next time to add some protein. Overall, good recipe to play with!

Gourmet Mushroom Risotto

I have never made risotto from scratch before! My husband and I had roasted lamb and thought this recipe would accompany it well. It's true, you have to keep stirring, but I didn't mind while my husband and I enjoyed wine. I did add 1/4 cup more wine and omitted 1/4 of stock in place. We added more cheese for our own taste buds! The risotto came out creamy and delicious! It was great left over too. This is a keeper!

Addictive Sweet Potato Burritos

We just didn't care for the sweet potato burritos. I felt the potatoes needed more mexican seasoning. A mexican blend cheese would have been nice as well, instead of plain cheddar. I think a chipotle/sour cream dipping sauce would have accompanied these burritos....I don't know why I didn't think of that while making this recipe. Another change I would make is use black beans or pinto beans instead of kidney.

Salsa Chicken Burrito Filling

Very good and easy! I use this recipe when I have left over pulled chicken or rotisserie chicken. I peel it apart and throw it all together. I too recommend using the low sodium taco seasoning. A can of rotel really gives some dimension to the chicken along with the salsa instead of plain tomato sauce. I have used the chicken to throw on top of salads or make tacos/burritos. Great chicken recipe to use for anything really!

Cheesy Ham and Hash Brown Casserole

We made this recipe for dinner one night. Who doesn't love breakfast for dinner? We liked the overall taste, but we found it very rich. I think it was the combination of potato soup and sour cream with no liquid to cut the heaviness. I think people who reviewed they added onions, pepper, mushrooms and other veggies have it spot on. This recipe needs something to make it less rich. We will certainly try again because the overall taste was very tasty! Plus, it was such a simple, throw together meal after a long day of work!

Hot Bean Dip

I made this for a football game get together for mexican night. I received many compliments. A lot of people said it tasted just like Taco Bell's beans. I intended for this to be a pre-game dip, which it was...but I noticed people were slathering the bean dip on tortillas while making their fajitas at half time. Other wives asked for the recipe. I was a little scared because I do not care for refried beans, but I needed a quick appetizer and this was a huge hit! I will certainly make it again for fiesta style parties!

Quick Pumpkin Oatmeal

This recipe is wonderful. I have had several friends ask me for the recipe. It is a great starter and then I add other ingredients to make it more personal. I use pumpkin spice, which is a mixture of all the listed spices. I used vanilla almond milk instead of milk due to a lactose issue. I also add a few drops of mexican vanilla. I do not care for pecans so I use walnuts instead. The first few times, I made the recipe as stated with my the changes listed in my review. Last week I added some fresh blueberries that were about to go bad. Mmmmm that was good. I have also added marshmallows if I really have a sweet craving. This recipe is so great! Kids love it too!

Simple Baked Apples

This recipe was great! I used vanilla almond milk because that is all I had on hand. I used granny smith and red delicious apples as well. On suggested based by other I used a combination of white and brown sugar because I think brown sugar really brings out the taste in tart apples. That is a personal preference however! I took this to lunch the next day with a baked sweet potato, loaded up the baked apple mixture and tossed some marshmallows on top and microwaved until warm, melty and oooy gooey. Everyone was asking what the delicious smell was coming from the break room!

Awesome Sausage, Apple and Cranberry Stuffing

This is very similar to Ina Garten's recipe on Food Network--which I have been making for a few year or so now. This dish is great. Sometimes I find myself craving it and will make just this for dinner as a comforting meal.

Super-Delicious Zuppa Toscana

So delicious! I too used kale instead of spinach. I used whole milk instead of cream because cream upsets our stomachs. The soup was the perfect consistency for us. I served with Texas toast garlic bread. I will certainly make this again and again.

Zucchini Crust Pizza

I followed the directions for the crust but not toppings. I salted my zucchini & let drain like other reviews stated. This was my first time making a zucchini pizza crust & it was great, it crisped up really well for me. However I didn't time the baking really. I pre-baked before adding the toppings so that the crust was cooked 1/2 way. I used whole wheat flour instead of AP (personal pref) and did add a little more. I topped it with shredded chicken, fresh spinach, chopped tomatoes, artichokes, chopped olives, red onion and goat cheese. I really loved this guilt free pizza!!

Triple Decker Grilled Shrimp BLT with Avocado and Chipotle Mayo

This was awesome! I didnt make my sandwich triple decker, just a single. It was just perfect! I only changed 2 things. I did not have avocado in the house so I used the mayo on 1 slice of bread and plain cream cheese on the other. It didn´t have the cooling effect that creamy avocado has, but it was still tasty. I also added 2 chopped chipotle peppers in while the shrimp cooked in a skillet. My mouth was on fire after I devoured the sandwich but it was so good!

Rosemary Ranch Chicken Kabobs

ah-maz-ing! I really wasnt expecting much even though there are great reviews. But wow! This was so good. We doubled the recipe, added green bell pepper and onion the skewers. We had baked potatoes and corn on the cob. I had the left over chicken the next day with a smoothie for a healthy lunch!
