About this Cook
I love to cook for family and friends! I am committed to eating healthy. But don't get me wrong, I still love pizza and burgers! I am a nurse and my husband is a firefighter/paramedic. Therefore, alot of the time I need recipes that heat up well for leftovers or just for 1.
My favorite things to cook
I like to cook pasta and Italian because my mom's side of the family is from Sicily. I make alot of Chinese, Japenese and Thai dishes because I lived in SE Asia for a year. Most of my family lives in Baton Rouge where I was born and lived as a child. Anything Cajun and spicy is gobbled up in my home!
My favorite family cooking traditions
I used to watch my mom and help her cook every night. Now I get to cook with her when we get together. I think it's so important to have family meals. Food brings people together and I suppose that is why I love to cook & eat. Every year we have spaghetti and meatballs on Christmas eve. I love that tradition.
My cooking triumphs
I think my cooking triumphs are that I cook with love. I rarely throw a dish together. I really take my time to chop and mix the ingredients. I find it a form of art and therapy at the end of a long day with a glass of wine. I would have to say my number one dish friends & family ask for consistently is my baked ziti with chicken parmesean or my cheesy squash casserole.
My cooking tragedies
I made bird nests for family Easter and they were so, so, so, SO bad. I used semi-sweet chocolate and karo syrup (as the recipe stated) but they were so bitter. I made 45 of them and I think we threw away 40. I was super bummed. Atleast they were cute in the planter box and fake Easter grass.

Terry's Texas Pinto Beans
Great starter recipe. For our tastes it needed much more seasoning like chili powder, oregano and paprika for a true Mexican flare. Let's face it, Texans also like meat in their pintos so I added 3 fat slices of peppered bacon. I started the beans in my crockpot on high for 4 hours, the beans still weren't done. So, I boiled them in my dutch oven for an hour until tender, adding water as I went. I served them in a bowl topped with fresh onion, cilantro, jalapeno and crumbled spicy, chipotle cheese. My husband smoked a pork loin so we ate the beans charro style with street style, pork tacos! Delish! I can't wait for leftovers!

Artichoke Spinach Lasagna
Very good!!!!! I just didn't make it lasagna style because I only had whole wheat pasta. I followed the directions otherwise.....EXCEPT I used fresh chopped spinach only because it was going bad. Other than that, this recipe was good ! If you follow me- you know I double the herbs and garlic for personal taste! Yum! Very good as left overs microwaved or re-heated in the toaster oven.

Pasta Primavera with Italian Turkey Sausage
Very very good! I also finely chopped some spinach I needed to get rid of. Because I basically minced the spinach leaves, we couldn't taste it. So I would say my review is as the recipe follows. We did add a few sprinkles of mozzarella and Parmesan cheese. Perfect and quick!
