I love to cook for family and friends! I am committed to eating healthy. I tried to go vegan but it wasnt for me. I stick to mainly a pescitarian diet during the week. I still eat meat but limit my intake.
My favorite things to cook
I like to cook pasta and italian because my mom's side of the family is from Sicily. I make alot of Chinese, Japenese and Thai dishes. I make hummus every week! I love my slow cooker since I am at nursing school most of the day. I can throw everything in that bad boy and crank it up. Bam! There's dinner.
My favorite family cooking traditions
I used to watch my mom and help her cook every night. 23 years later it is still that way. Now I get to cook for her! I think it's so important to have family meals. Food brings people together and I suppose thats why I love to cook & eat. Every year we have spaghetti and meatballs on Christmas eve. I love that tradition.
My cooking triumphs
I think my cooking triumphs are that I cook each and everyday for the ones I love. The world is so fast paced and fixated on this fastfood garbage. Sure I still make french fries and chicken strips but atleast I know what is in them. I truley cook with my heart & that makes me so happy. My triumphs are when there is not a single leftover because everyone devoured my creations! I would have to say my number one dish friends & family ask for consistently is my baked ziti with chicken parmesean or my cheesy squash casserole (Paula Deen's recipe).
My cooking tragedies
I made bird nests for a family Easter and they were so bad. I used semi-sweet chocolate and karo syrup but they were so bitter. I made 45 of them and I think we threw away 40. I was super bummed.

Triple Decker Grilled Shrimp BLT with Avocado and Chipotle Mayo
This was awesome! I didnt make my sandwich triple decker, just a single. It was just perfect! I only changed 2 things. I did not have avocado in the house so I used the mayo on 1 slice of bread and plain cream cheese on the other. It didn´t have the cooling effect that creamy avocado has, but it was still tasty. I also added 2 chopped chipotle peppers in while the shrimp cooked in a skillet. My mouth was on fire after I devoured the sandwich but it was so good!

Rosemary Ranch Chicken Kabobs
ah-maz-ing! I really wasnt expecting much even though there are great reviews. But wow! This was so good. We doubled the recipe, added green bell pepper and onion the skewers. We had baked potatoes and corn on the cob. I had the left over chicken the next day with a smoothie for a healthy lunch!

Scalloped Potatoes and Onions
I have been making these for a long time now. I leave out the onion for personal pref but replace it with a little onion and garlic powder. I was skeptical of the mayo the first time I gave the recipe a try. But its amazing!
