My family loves this recipe---no more microwave popcorn! Due to nut allergies we use canola oil instead of peanut. Also, we've used a variety of salt (garlic, onion, seasoning). Thank you for the recipe!!

Make Ahead French Toast

I made cinnamon raisin bread in my bread maker and used this in place of the french bread. Also, I cut the bread into cubes and mixed the bread with the egg mixture. It was a huge hit!

One-Dish Chicken, Vegetable and Rice Bake

Dinner was OK...chicken was dry. So the next time I'll place the chicken on the bottom and the rice/veg on top.

Best Carrot Cake Ever

This is a FANTASTIC carrot cake recipe. Everyone LOVES it. It is somewhat time intensive, but worth it! I have 2 modifications, though. First, I add the raisins to the carrot/brown sugar mix & let all 3 ingredients sit for 60 minutes. Second, because of the massive amount of cake mix, I use 3 cake pans instead of 2.

The Old Boy's Strawberry Pie

I haven't been a big fan of strawberries, but this recipe changed my mind...or should I say tastebuds. It is WONDERFUL and the crumb topping is a great compliment. I've made this twice (getting ready to make it a third time) and the only thing I may consider is adding more strawberries. After the pie is done, there seems to be alot of crumb topping as compared to strawberries. I serve it warm, with ice cream...YUM!

Fruit Filled Cheesecake

The first time I made this I followed the recipe to a "T" and didn't like the crust. The next time I made this recipe I changed the crust to a standard graham cracker crust: one pack of graham crackers, 1/4 cup sugar, 1/4 cup melted butter. I've used different fruits (blueberry, cherry & apples). Also, I baked the cheesecake for one hour at 300 degrees (in a water bath). After the cooking time, I let it sit in the oven for another hour. People LOVED the cheesecake!

Chicken Fiesta Salad

Excellent recipe everyone loves. Instead of rubbing the dry mix on the chicken, I mixed the marinade according to the directions on the package & marinated the chicken for a little bit before making.

Roasted Vegetables

Wonderful recipe! You can vary the vegetables (i.e., for simplicity sake, use zucchini vs. butternut squash). My company loved the addition/flavor of the sweet potatoes.

Spaghetti Sauce

SUBSTITUTIONS: Stevia for sugar ADDITIONS: 1 lb. hamburger. I thought the sauce needed to be a bit "thicker" so I added a can of tomato paste. Turned out nicely and will definitely make again (with above mentioned modifications).

Baked Slow Cooker Chicken

Good recipe but I won't cook it as long next time...a bit too dry. Also, to add a bit more flavor next time, will put onion in cavity. Loved the idea of placing chicken on balls of foil.

Fudge Truffle Cheesecake

Definitely for "chocoholics"...very rich! It makes a beautiful presentation (no cracks, even). I topped it with chocolate covered strawberries. I used my own crust recipe (1 1/2 cups chocolate graham crackers crumbs, 1/2 cup sugar & 1/4 cup melted butter).

Banana Date Flaxseed Bread

I really enjoyed the bread. I used the blender to ground the flax seed, substituted 1 TBSP Stevia for the sugar, unsweetened applesauce for the oil & raisins instead of dates. I gave it 4 stars instead of 5 stars only because I wasn't as fond of the whole flax seed texture(will probably ground all the flax seed next time). It is a great way to have a sweet treat that is so much better for you.

Pork Tenderloin with Mustard Sauce

My husband & I LOVE this recipe-it's very simply yet elegant! The mustard sauce has quite a KICK but we like it-to be on the safe side, I'd recommend starting out with a smaller amount of mustard powder and adding to meet your preference.
