Butter Flaky Pie Crust

Way too much butter! Totally ruined my apple pie. Not sure what went wrong but butter pooled on top of my pie, dripped out on the cookie sheet below then to the bottom burner. I didn't do a braid, just a regular top crust. Smoke everywhere!

Old Fashioned Pineapple Upside-Down Cake

OK I am making this cake now. I will cut the sugar down a bit, add 2 tablespoons of sour cream and add 1/4-1/3 cup of pineapple juice to the batter. Problem is I don't have a mixer so will try whipping it with a whisk. Wish me luck, I hope it works! Also my cast iron skillet is only 10 inches, crossing fingers.

Chicken, Rice and Vegetable Soup

I used brown rice instead of the white rice, threw in some cut up fresh green beans, added some sage, parsley and basil and cooked it a little longer than called for. I didn't measure but I know I used more chicken, celery, onions and carrots as well. Also used bullion cubes and filtered water instead of the broth. As I was using boneless skinless chicken, I didn't pre-cook it at all, just cut it up and threw it in. It was delicious!

Skillet Chops with Mushroom Gravy

This is very good, I always add some fresh basil and parsley to the bread crumbs and Parmesan and use Olive Oil instead of veg. oil. Served with mashed potatoes and steamed broccoli and carrots.

Good Old Fashioned Pancakes

This is a great recipe. I didn't have baking soda, which most recipes call for and this one is perfect. Although I agree, use less salt, other than that I wouldn't change a thing.

Chicken Potato Bake

I have tried this with chicken and fish. If you put cut up whole wheat bread and crackers along with some spices/herbs and parmesan/ramono cheese mixed with some melted butter on top, it is always good. Throw in some potatoes, cut up onions and mushrooms and have with brown rice. Delicious!

Easy Broccoli Quiche

I didn't chop the broccoli but steamed it until not quite done and lay it in the bottom of the partially cooked pie crust. I also use the stalks of broccoli just peal them and cut into chunks. I used 3 different shreaded cheeses; swiss, sharp cheddar and mozzerella. I mixed the cheeses with the egg mixture and poured it over the broccoli. Dot the top with butter. It was really good with a homemade whole wheat crust.

The Best Bean and Ham Soup

One suggstion, if you are using smoked or cured ham, do not add salt to this recipe. I made this with the ham bone and left over ham from Easter 2010. EXCELLENT!!! I will freeze some for later as I am only cooking for myself and my husband. I bet he will be taking some to work for lunch. Note: after it simmers for about 4 hours, it is easy to take out the bone and cut up the ham to add back in. Awesome recipe!

Vegetarian Quiche

This sounds a lot like the recipe I use. I use cayenne pepper instead of curry and omit the cinnamon. Also add 1 cup each of mozzerella and swiss with the 1/4 cup paremesan. Reduce eggs to 2. You can use broccoli instead of zuchinni. Also good with a whole wheat crust. Very cheesey and Yummy!
