Slow-Cooker Pepper Steak

Reviewed: Sep. 26, 2013
LOVED this! I also bought pre cut stir fry strips. It was only a pound and a half so I used one bell pepper only. I also used stewed tomatoes with jalapenos which gave it a little zing (it was still pretty mild). I cooked on low for about 6 hours. I added another tbsp of cornstarch disolved in water the last half hour to thicken it up a bit and also decided at that point I wanted some more veggies. So I microwaved a steam fresh bag of broccoli and threw it in. Noone was home early enough to add the bell peppers and onion in a couple hours before so I added them in the beginning. They were very soft. I would have preferred to throw them in later but it didn't take away from this great recipe. The beef was super tender and it was very tasty. I served it over quinoa.

Italian Bow Tie Supper

Reviewed: Apr. 27, 2012
Great recipe and it does make a ton. Good when you need something easy to feed a house full of company. When I make it for our family of 3, I half it. I followed this recipe pretty much except for doubling the tomatoes and sauce as suggested by other reviewers. I kept the cheese the same for my wasteline's sake and it was still fabulous. Oh I did use extra garlic too because I love me some garlic :)

Fisherman's Quick Fish

Reviewed: Nov. 16, 2011
This is quick, easy and delicious. I even fed it to two teenage boys and they loved it. I used BBQ chips and the results were fantastic. I am married to a fisherman and always looking for different things to do to fish because we get sick of the same old thing. This will definitely go in the rotation!

Kentucky Pecan Pie

Reviewed: Nov. 25, 2010
This was the first pecan pie I ever made. I made it as a tester for me and hubby the day before Thanksgiving. It was amazing and gone by turkey day breakfast. The last piece of pecan pie I had before this was from Goode Company and it is hands down the best pecan pie I ever had! This was not quite Goode company but it was dang close with it's buttery deliciousness. However, because my last comparison was so dang good I struggled with giving this a 4 or a 5. I decided I would wait and rate it until after Thanksgiving day dinner at my inlaws so I could compare. As you see, I gave it a 5. My mother in law makes a dang good pecan pie and this one was better ....sssshhhh :) Mine set just fine. I covered the entire thing with folil for the first 30 minutes and left it uncovered for the rest. I had no problems with the crust or pecans burning. I also used the chrisco pie crust recipe which was super easy and was a nice contrast to the super sweet buttery pie filling. I highly recommend this recipe.

Firecracker Grilled Alaska Salmon

Reviewed: Oct. 20, 2010
WOW - this recipe is amazing. Such a great taste. I might add a bit more red pepper flakes next time to bring the spice up a bit. The marinade is a tangy, sweet and slightly spicy taste. Next time I might also try cooking it on a cedar plank to add some smokiness. Definite keeper.

Chimichurri Sauce

Reviewed: May 23, 2010
I had never even tried chimichurri but I was making flank steak and figured I needed to try this supposed delicious combination. This sauce was amazing and it does in fact pair perfect with flank steak. I made a dressing out of the leftovers by mixing it with mayo, yogurt and milk and that also came out great!

Donut Muffins

Reviewed: May 23, 2010
These are simple and delicious. I realized as I was putting the batter in to the pan that it was meant for mini muffins but I only have a regular pan. I divided it amongst about 9 cups and followed the exact recipe. They came out great. I might cut cown to 1/2 tsp of nutmeg next time and see how that comes out.

To Die For Blueberry Muffins

Reviewed: May 23, 2010
This is a great recipe and the muffins came out super good. The top came out really crunch and sweet. It was good but I think I prefer something mileder for my already sweet muffin which is why I rated this a 4 instead of 5. I would not hesitate to try this, it may be perfect for you.

Buffy's Refried Beans

Reviewed: May 5, 2010
This was a great recipe that helped me find what my beans were lacking- which is plenty of liquid. I used chicken broth and they were really good!

I made this recipe pretty much as directed, using beef stock. It was amazing and really easy. It was as good and better than some you find in restaraunts. I added a bit of cornstarch mixed w/ cold water at the end to thicken it some. This recie is a keeper!

Baby Back Ribs

Reviewed: Apr. 4, 2010
So simple! WE made these for easter and they lived up to all the great reviews. I rubbed my meat down and let sit overnight, then coated with some bbq sauce when I put them into the oven. I also broiled mine about 5 minutes per side basting twice per sided. They were wonderful!

Jay's Jerk Chicken

Reviewed: Mar. 14, 2010
I toggled between a 3 and 4 because although this is a great marinade, it wasn't enough "jerk" style for me. Maybe all I need to do is add some more peppers, I'm not sure. I tend to like my jerk more of a rub style which this isn't but despite my complaints, I think this is a great every day marinade. Just not jerk enough for me.

Good Old Fashioned Pancakes

Reviewed: Mar. 14, 2010
This is the perfect pancake! Very fluffy. The only change I made was adding some vanilla and because of that I cut back on the sugar a tad. I also put a littlel vinegar in my 2% milk and let it stand for a few minutes to make it more of a buttermilk. This is a pancake like you get a really good breakfast spot!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Reviewed: Feb. 3, 2010
Wow, these were yum. My first batch did not cook long enough so my tops fell and a bit of mushy cupcake batter in there. My second batch was perfect, I cooked for about 17 1/2 minutes. I frosted with chocolate buttercream and they were fabulous. I will definitely make again; however, I would like to figure out why my good batch had a gap between the cookie dough and cupcake-like an air pocket. I noticed in a pics a few had this but most didn't. So, I'll just keep trying!
