This recipe was a hit... Didnt have lemon juice or vinegar on hand so I used 1tbs fresh squeezed lime juice and used red wine vinegar. Tasted amazing!

I used a few pointers from this recipe to go along with my boyfriend's moms version which has its own sauce which we used. He even said it was better than hers!!! That earns 5 stars..... The double flouring and freezing for 30 minutes was key!

Portofino Lamb and Artichoke Risotto

This was a great recipe for leftover lamb roast! Im not sure why people had so many issues with presentation. I think they used too much red wine. I used 1/3 cup Merlot and it definitely wasnt purple as described. My big chain grocery store did not carry Arborio rice or any short grain for that matter. So ended up using medium grain. There is only 2 of us so used 1 cup rice and 3 cups broth. I used hot marinated artichokes for extra flavor and it came out great. I was worried about under cooking the rice but turned out slightly overcooked by the end. For the med grain next time I would use maybe 2 3/4 cups broth instead.

Barbeque Halibut Steaks

I love making halibut this way... except with lots of soy sauce and lots of honey simmered then marinated for about 20 minutes. Great with jasmine rice and seasoned seaweed.

Phyllo-Wrapped Halibut Fillets with Lemon Scallion Sauce

This was amazing. I had phyllo left over from a dessert I made earlier in the week and didnt know what I was saving it for. It was in pieces but using butter and basting brush created a perfect dinner. I did follow others suggestions and only use 1 1/2 tbs lemon juice and 1 cup whipping cream. Added Oregano and lots of parmesan to the sauce. If I had white wine I would of added that as well. I had very thick fillets and was worried about the baking time. Covered them with foil for the first 5 minutes and cooked an additional 5 minutes, was a little too long. 15 minutes would of been more than enough for these super thick fillets. It definitely wasnt the low fat version but it was amazing.

Chicken Breasts with Balsamic Vinegar and Garlic

Made this last night for something different than the same old chicken. Omitted the mushrooms since the man hates them (i would of loveeed it) followed everything else along with a few reviewer modifications. Used only 2 large chicken breasts pounded flat. Used lots of garlic and added a half a can of diced tomatoes/juice. It was perfect!

Mexican Baked Fish

I skipped over this recipe several times because it just seemed so boring. I enjoy making complex flavor recipes. But i needed something quick and easy for dinner last night so decided to give it a shot. I salt and peppered the fillets. Coated with Spicy mayo, then topped with salsa and cheese. Served with tortilla chips and guacamole. It was amazing. Still cant believe how good it was and so simple. Next time I'll probably throw on some fresh cilantro.

Red Snapper Livornese

Sooo easy! I love this recipe because we do a lot of fishing theres always tons of rockfish in the freezer along with a bottle of cheap white wine. I add a LOT of crushed red pepper and I use a little water to rinse out the canned tomatoes to add more liquid to the recipe.
