Eggplant Parmesan II

Great! I made this for a dinner party and everyone loved it. I seasoned my own breadcrumbs with typical Italian seasonings and some cayenne pepper for an extra kick. I also found that the slices needed to bake for 10 minutes per side.

Indian Dahl with Spinach

This was fantastic! I doubled all the spices and I used a package of frozen spinach in lieu of fresh. I also opted, as one reviewer suggested, to use fat free plain yogurt instead of coconut milk. This was a great, easy recipe!

Citrus Scallops I

This dish was great! I took one of the reviewer's advice and omitted an orange, and I found that that was smart move. I served this with lo mein noodles and it was a big hit. I'd definitly make this again.

Real Hummus

This was pretty fantastic. I dislike store bought hummus because of it's weird consistency, and this is so easy to make (and less expensive!) that I'll never buy hummus again! I've made it twice and I preferred the taste with fresh lemon juice. I also used both a dash of cumin and fresh ground black pepper. Thanks!

Roasted Garlic Bean Dip

I made this for a pot luck at work and everyone enjoyed it. I saw people using it as a vegetable, tortilla and pretzel dip. Instead of sour cream I used some drained yogurt that I had on hand (I let the yogurt drain overnight in a cheesecloth). I was afraid that four heads of garlic might be a bit excessive, but it wasn't. I think it'd also be tasty in place of hummus on a sandwich.

Tzatziki Sauce

I brought this in for a work potluck as a vegetable dip and it was a big hit. Like some people suggested, I blended everything in the food processor and gently mixed it with the yogurt that I had let drain overnight. It was a good dip consistency and tasted just like the tzatziki I get in my favorite Greek restaurant!

Pasta e Fagioli II

I made this for a potluck at work and everyone really enjoyed it. I had to add a lot more liquid but it still turned out good. I had a friend come over to help me finish off leftovers and she couldn't stop yapping about how great it was!

Israeli Moroccan Couscous

This dish is fantastic! It is one of the few things that I've tried with "Moroccan" in the title that actually tastes like something one would eat in Morocco. It was sort of labor intensive with all the vegetable cutting but well worth it. I did not include saffron and opted not to include the turnips. I added an additional 1/2 tsp of tumeric and curry, and it still turned out great. I will definitely make this again.
