Yummy! A great change from regular tacos, and it makes me want to become a red-meat-aterian. I didn't have any red wine vineagar, so I used rice vinegar instead. I learned that rice vinegar is a very mild vinegar, so you can often sub it for other vinegars with good results. Overall, it was an awesome recipe. Next time, I may double the lime and maybe add 1/2 teaspoon chili powder. I used about half as much black pepper as called for, and used wayyy more lettuce due to personal preference. I added Mexican Rice II to the tacos, and it was a nice touch that balanced out the flavors. It was a quick, easy meal that could easily just be thrown in the crock pot all day and be great.
