Garlic Chicken, Vegetable and Rice Skillet

A very easy weeknight dinner option. I substituted one sliced yellow squash in place of the frozen veggies and they were steamed perfectly by sitting on top of the rice while it cooked. Needed a little something to finish it off and a splash of lemon juice did the trick to add a lot more depth to the dish.

Easy Tilapia

We've made this three times and it has been great each time. I didn't have asparagus the second two times which was fine. The third time I used canned diced tomatoes and sliced yellow squash and it was delicious as well. Very flexible recipe (and I don't stray much from recipes normally). Serve over angel hair pasta for a complete meal. We especially love that it only takes ONE pan...two if you make pasta.

Balsamic Baked Tilapia

I was surprised how great this turned out because it sounded so simple -- and it really was easy to prepare AND clean up! The ingredients are easily on hand and this will probably become a regular in our tilapia recipe rotation. We served it over white riceinstead of salad greens, which was a nice side.

Dijon Grilled Pork Chops

As another reviewer mentioned, this isn't a knock-out recipe. It is a great, quick "everyday" dinner. We cooked our boneless pork chops in a skillet with a splash of oil and some extra marinade -- we didn't have time to grill. Came out subtly flavored and juicy.

Basil Chicken over Angel Hair

Flavorful, but very light! Great for summer and so simple. I cooked my chicken first and then used the same saute pan for the rest of the recipe. It's a one-dish-wonder (plus a pot to boil pasta)! I used grape tomatoes and added a can of diced tomatoes as well, for the extra juice. Worked perfectly. I left out the hot sauce because I wasn't in the mood for something spicy. Next time I'll add that too or some red pepper flakes.
