Margarita Grilled Shrimp
This was very good! I have a 9 yr old whom I constantly battle about food...and he loved it! I used chicken breasts (again...picky eaters, ugh) which I cooked in the grill pan. As suggested by other reviews I added about 3-4 TBSP of tequila and a splash of OJ. Next time I will add some red pepper flakes for a little more heat. Great marinade!!

Dijon-Tarragon Cream Chicken
This dish is amazing!! 30 minutes...1 skillet and it tastes like something you would get in a French restaurant. I doubled the sauce. I also added about 3 tbs of white wine before I added the cream. I used 3 tsp tarragon and 1 tsp rosemary and that was wonderful. I pounded my chicken & it was sooo tender. Served it all up on angel hair pasta and my family loved it. Even my very picky teenage daughter said it was "nothing short of amazing"!!

Fish Roll-Ups
This was amazingly good. I used shrimp and 4 tbs of fresh minced onion. I made the whole batch of filling, but only used 6 fillets and it seemed like the perfect amount. I salted & peppered both sides of the fish before filling since sole is kind of bland. I used shredded Parmesan rather than grated because I like it better. After it finished baking I removed the foil and put it under the broiler for about 5 mins. My family (even my very picky teenage daughter) could not get enough and asked me to make it again tonight!!
