Lemon Cupcakes

Great recipe! I made these last night and tried them today and they are delicious. I made one alteration to the recipe by using half a cup of applesauce and half a cup of butter in place of a full cup of butter. I find the applesauce keeps the cupcakes and cakes more moist, makes them more healthy, and you don't even miss the butter. Next time I will add more lemon juice and lemon zest as I like a stronger lemon taste. I made a lemon buttercream frosting to go with them that was excellent (3.75 c. Confections sugar, 1 c. Butter softened, 1 tbsp heavy whipping cream, 1/8 tsp salt, 1 tsp vanilla, and juice & zest of 1 lemon). I'll be making these cupcakes again. Thanks!

Chocolate Chip Banana Bread I

Really delicious banana bread! I've tried many different recipes and this is now my favorite, along with the rest of my family. I made a few modifications to make it a little healthier (and because these were the ingrediants I had on hand): used whole wheat pastry flour instead of cake flour; added 1 tsp cinnamon and 1/4 tsp pumpkin spice; used 1/4 c. butter and 1/4 c. applesauce instead of 1/2 c. butter; used approx 2/3 c. sour cream and left out the buttermilk because I didn't have buttermilk on hand; instead of all white granulated sugar, I did half brown sugar and half white granulated sugar. I absolutely loved the banana bread - full of banana flavor, moist and dense, and all around delicious!

Greek Pasta Salad I

Delicious recipe! I shared this with my co-workers and they loved it. Some reviewers mentioned it being a little strong with the vinegar flavor, but that was a big hit amongst everyone that tried it. Also, I substituted sun dried tomatoes in place of cherry tomatoes since I had them on hand and it tatsted great. Thank you, this was wonderful!

Michelle's Soft Sugar Cookies

Great sugar cookie! After trying another recipe for sugar cookies that left me with sand like dough, I found this recipe and decided to give it a go. I followed the review of others and substituted cream or tarter and baking soda for 4 tsp of baking powder. I don't cook with margarine, so i used butter instead. Since I was testing these for flavor with the first attempt, I didn't chill and just dropped large spoonfuls on my baking sheets right after mixing all ingredients. I baked at 400 degrees for 10 min, as I was using double insulated baking sheets. They came out perfect! Slight crunch on the outside and a nice soft center. Thank you!
