YUM! I just made these cupcake/muffins for my family and they were a big hit! I followed the advice from other reviewers and chopped the apple. I think this helped the apple flavor come through better. I also used only 1/3 cup of shortening, then mae up for the other 1/3 cup with applesauce. This too helped the apple flavor be more prominent, as it would have been lost next to the distinctive banana taste. One more thing; I had no buttermilk, so I just used regular skim milk with a bit of lemon juice. Wonderful recipe- thanks so much! ( Oh, by the way, this only made 18 cupcake.muffins for me- don't know why. Plus, I glazed these with "vanilla glaze" off this site and it worked out fantastically- especially after I added food coloring to make it pink:) That made them beautiful and fun, as well as delicious).
