Spinach Tomato Tortellini

5 stars with a few changes; probably only 4 as written. I had to add some cornstarch to thicken the sauce as it was somewhat runny - cornstarch solved the problem. I added some extra garlic, and torn fresh basil at the end. I substituted fat free half and half for the heavy cream to make it a little healthier. My dinner guests were impressed and I definitely plan to make this again!

Cannoli

This was my first attempt at making cannoli filling. This was delicious! Super easy but very impressive to our dinner guests! I drained my ricotta in a strainer for a few hours before combining the ingredients. I, too, omitted the almonds and didn't miss them at all! I will definitely be making these again!

Italian Bread Wedges

This was delicious! I used the bargain brand italian dressing and it was still delicious! I used basil pesto flavored olive oil instead of the canola oil adding a great extra italian flavor!

Taco Lasagna

5 stars with quite a few changes - otherwise probably only 3 stars. I make my version of this in my regular rotation - my husband and I love it! After browning the meat, I mix in a jar of salsa, one small can of tomato sauce, and a packet of taco seasoning. I then layer a tiny bit of the meat sauce in the bottom of the pan, followed by three cooked lasagna noodles, 1/3 meat mixture, 1 cup taco cheese, and repeat two more times. On the final layer, I add crushed tortilla chips before placing in the oven. I usually cook in 350* for 20 minutes, uncovered. Delicious!

Ice Cream Sandwich Desserts

I love this recipe! It's so fast, and so simple! Even my super picky husband loved this. The only change I made was to use fat free cool whip and Hershey's syrup to cut down on the fat/calories somewhat. Also, since it's just for the two of us, I made it in a loaf pan using 10 ice cream sandwiches and 8 oz. cool whip - it worked great! I'll definitely be making this again!

Chicken Cordon Bleu II

I'll start by saying maybe it's just me... But 99% of the time I agree with reviews on this site after making the dish. This time, I was left disappointed. The sauce is DELICIOUS! I totally agree there. But the chicken turned out rather bland minus the sauce. I followed others' recommendations to wrap the cheese inside the ham, but most of it melted out anyway. I also followed the recommendations to use seasoned breadcrumbs, which should have helped. For me, this was a lot of time and effort for minimal pay out. I'll keep searching for a new cordon bleu recipe. I will, however, make this sauce in the future to top steamed veggies and even steak.

Fettuccine with Sweet Pepper-Cayenne Sauce

This was excellent! I followed others' advice and used only 1/2 cup chicken broth, and mixed the sour cream in last. I added basil and crushed red pepper flakes, and substituted fat free sour cream to make it a little healthier. Overall, it turned out to be fantastic and we'll definitely be making this again!

Chicken Fajita Marinade

Fantastic! With just a few tweaks, this is a really great recipe! I doubled the amount of cumin, added a few dashes of cayenne pepper, chili powder, and a green chili hot sauce, and then added one tablespoon of cider vinegar. I only had one hour to let it marinade, but it was still extremely flavorful! My husband and I couldn't get enough of this! Thank you!
