Spinach Tomato Tortellini
5 stars with a few changes; probably only 4 as written. I had to add some cornstarch to thicken the sauce as it was somewhat runny - cornstarch solved the problem. I added some extra garlic, and torn fresh basil at the end. I substituted fat free half and half for the heavy cream to make it a little healthier. My dinner guests were impressed and I definitely plan to make this again!

This was my first attempt at making cannoli filling. This was delicious! Super easy but very impressive to our dinner guests! I drained my ricotta in a strainer for a few hours before combining the ingredients. I, too, omitted the almonds and didn't miss them at all! I will definitely be making these again!

Taco Lasagna
5 stars with quite a few changes - otherwise probably only 3 stars. I make my version of this in my regular rotation - my husband and I love it! After browning the meat, I mix in a jar of salsa, one small can of tomato sauce, and a packet of taco seasoning. I then layer a tiny bit of the meat sauce in the bottom of the pan, followed by three cooked lasagna noodles, 1/3 meat mixture, 1 cup taco cheese, and repeat two more times. On the final layer, I add crushed tortilla chips before placing in the oven. I usually cook in 350* for 20 minutes, uncovered. Delicious!
