This soup is really easy and tasty. I usually use kale instead of spinach because I think it holds up better when packing left overs. I also add a little bit of cajun seasoning. It has to be really good since this is one of the few dishes I make that my husband will eat!

Sausage Casserole

I made this for a breakfast potluck and had several requests for the recipe. The only thing I changed was that I used a frozen o'brien potato mix and omitted the extra onion. I only had large eggs in the fridge, so I ended up using 8. Absolutely delicious I will be making again as soon as possible.
