Spicy Chicken Rice Soup

Finally made this soup and it was delicious! I almost doubled the broth and am glad I did b/c there still wasn't as much as we are used to. I boiled the chicken breasts in the broth and then shredded the meat. Added 4 cloves of garlic and used 2 tsp oregano, 1/2 tsp cumin, one bunch of fresh cilantro and 3 serano peppers instead of the red chili flakes. Flavor and spice level was perfect! Also used brown minute rice which I added 10 minutes before it was done. At this same time I added the shredded chicken and the red onions which I had sauteed in 1 TBS olive oil. Will make again!

Missy's Candied Walnut Gorgonzola Salad

My husband and I both loved this! We made it using spinach and made our own salad dressing from seedless rasberry jam, Balsamic vinegar and olive oil.

Veronica's Hot Spinach, Artichoke and Chile Dip

My husband and I loved this! It is essential that you not only drain the artichoke heart can but you squeeze out each artichoke heart to get the liquid out. Also drain the spinach the best you can. Provided this has been done, you will not be dissapointed!

Bermuda Spinach Salad

This dressing is so good and the salad is delicious. I reduced the sugar by a third and it was still plenty sweet. My husband and I both loved it!

Roast Leg of Lamb with Rosemary

Wow! So tender and delicious! This was my first time making lamb and it was perfect. The only thing I would have changed is to cover it with foil so that the top didn't char. Aside from that-delicous!

Amazing Cocktail Sauce

Fantastic! We are Americans living in the UK for the next year and they use mayo in EVERYTHING including their shrimp sauce.... When we couldn't find red shrimp sauce anywhere, I decided to make it myself. My husband raves about it and says when we return to the states we will never resort to store bought sauce again. Super easy and very tasty! Added some tabasco since we like the flavor in our shrimp sauce and used to add it back home, but aside from that followed recipe exactly.

Super Seven Spinach Salad

Made this and the Poppy Seed Dressing I by Tina. Everyone seemed to enjoy the salad but I was not overly impressed myself. It tasted too much like mayo and I felt that it could have used more spinach.

Spanish Potato Omelet

This looked and tasted wonderful. I cut down the oil by half and it still cooked well. Also, i'm not a fan of cold food on my hot food, so I put the tomatoe and green onion on top of the omelets when they were in the pan still right at the end and covered with a sprinkle of reduced fat cheddar which helped to hold them to the omelet. I removed as soon as the cheese had melted.

Super Al's Cocktail Sauce

This is the best cocktail sauce ever. The only thing I add is a generous shaking of Tobasco sauce. I will never buy from the store again!

Long Soup

This soup was easy to make and pretty good. We added 7 large fresh mushrooms (thinly sliced), 3 serrano peppers (for heat), 3 cloves of garlic, and extra cabbage. Instead of decreasing noodles as other reviewers suggested, we increased the amount of chicken broth and added 1 TBS fish sauce and increased soy sauce to about 4 TBS. This made the soup much more flavorful.

Restaurant Style Chicken Nachos

These were the best nachos I have made. We served with additional salsa and sour cream. Used 1/2 fat mature cheddar cheese. We added diced red onions before baking.

Tomato, Corn and Avocado Salsa

I didn't have olives but made the rest as stated and added fresh cilantro. This is a very good and fresh tasting salsa which gets better after sitting overnight.

Horseradish Pork Chops

This is so easy and so good! We usually add extra horseradish but that is just because we like spicy. I normally only need to cook a total of 30 minutes in the oven but that of course just depends on the size of your pork chops (thickness).

E-Z Drop Biscuits

These are perfect, just like from red lobster if you add some cheddar cheese. I left out the cream of tarter. They are also wonderful w/ butter and honey (without the cheese) for breakfast.

Irish Stew

I thought this was a tasty stew recipe but my husband wasn't a fan. We added an onion, extra potato, and the leftoever leg of lamb from easter. I would recommend it to most people, i think my husband just doesn't like stew in general.
