Tortilla Soup I

Reviewed: Mar. 2, 2010
This recipe is very easy and delicious! We made it and then again later that same week. I added a can of black beans and a hot pepper. In addition we opted for the canned tomatoes and jarred jalapenos which have more flavor canned than fresh. Served w/ tortilla chips, cheese garnish, fresh cilantro, Creme fraiche, and voila! Delicious dinner and left overs.

French Beef Stew

Reviewed: Mar. 28, 2010
I followed the directions but added one onion. We served with french bread, which is a must. The dijon overpowered the flavors and this just wasn't the type of stew I had hoped for.

Very easy recipe that my husband and I really enjoyed. We used extra mushrooms, fresh garlic cloves, and added a serano pepper for spice. Will make again!

Chicken and Dumplings III

Reviewed: Apr. 3, 2010
This recipe was amazing! My husband and I both loved it and it was easy to make. I made a few changes. I added an extra can of chicken broth, 2 cloves of garlic, and a carrot, which I cooked w/ the celery and onion. I boiled the chicken breasts in the broth for 15 minutes and then shredded the chicken and added it back into the soup right before I added the dumplings. We prefer the shredded chicken in a soup. I will definetely make this again.

Pleasing Potato Pie

Reviewed: Apr. 4, 2010
This recipe was good but next time I will make a few changes. I did bake the potato crust for 20 min. before adding the filling and it still could have baked longer for a crisper bottom crust. I substituted sausage for the ham and added green peppers and some hot sauce and paprika. It tasted really good but I would add some extra spices next time to spice it up for our liking. Thanks for the breakfast recipe-it was a great Easter breakfast for us!

These were quite tasty and moist pork chops, next time I think I will add some extra spice to the cracker mixture though.

Irish Stew

Reviewed: Apr. 15, 2010
I thought this was a tasty stew recipe but my husband wasn't a fan. We added an onion, extra potato, and the leftoever leg of lamb from easter. I would recommend it to most people, i think my husband just doesn't like stew in general.

Roast Leg of Lamb with Rosemary

Reviewed: Apr. 15, 2010
Wow! So tender and delicious! This was my first time making lamb and it was perfect. The only thing I would have changed is to cover it with foil so that the top didn't char. Aside from that-delicous!

Mushroom Pork Chops

This is quite tasty. We like to add a serano pepper to add a little heat to it. Love lots of mushrooms, you can't have too many.

Jen's Heavenly Egg Salad

Reviewed: Apr. 16, 2010
This was good, we made it for 2 though and next time I would make more of the sauce to coat the eggs. Loved the lemon, loved the dijon, and green onions are awesome additions!

This is flavorful but a bit too much tomatoe flavor for my tastes.

Quick and Easy 20-Minute Chicken Posole

Reviewed: Apr. 18, 2010
Very flavorful but rather than slice the olives, next time I will cut them even smaller to spread out the olive flavor.

Country-Style Grilled Ribs

Reviewed: Apr. 18, 2010
These ribs are amazing! You have to add water when you are baking them or they will get dry. We increased the amount of hot pepper sauce to 1/2 teaspoon and it was perfect amount of spiciness for us (we like all things hot) but it also didn't overpower the flavor. The sauce is to die for!

Classic Chicken Noodle Soup

Reviewed: Aug. 29, 2010
My husband and I agree, this will go into regular rotation. Instead of a rotisserie chicken I boiled 3 large chicken breasts in the broth/water for 20 minutes and then removed and shredded the chicken w/ a fork. Added 2 serano peppers for heat and 3 cloves of garlic. Also reduced the olive oil to 1 TBS to sautee the vegetables along with some spray olive oil (worked great). We didn't have fresh parsley so I used 3 sprigs of fresh basil. Next time I will make more broth as it wasn't soupy enough for our taste. Wonderful recipe!

Black-Eyed Pea Gumbo

Reviewed: Aug. 31, 2010
MMM...My husband and I both loved this. We added chalula, tobasco, 1 TBS chili powder, and increased the amount of vegetables. We doubled the chicken broth and still would have liked it a little more soupy next time. Next time we will add shrimp.

Tuna Noodle Casserole III

Reviewed: Sep. 4, 2010
Per other reviews, added an additional soup can of milk and 2 TBS sour cream and i'm glad I did because it was just the right consistency. I skipped the butter. Added an extra can of tuna, 1/3 cup red onions, 1 cup of frozen peas, 3 cloves of garlic, sea salt, & course black pepper. Cooked for 10 minutes, stirred, and covered with crushed croutons and parmesan and cooked for an additional 10 minutes. This was pretty good for a basic casserole dish!

Amazing Cocktail Sauce

Reviewed: Sep. 13, 2010
Fantastic! We are Americans living in the UK for the next year and they use mayo in EVERYTHING including their shrimp sauce.... When we couldn't find red shrimp sauce anywhere, I decided to make it myself. My husband raves about it and says when we return to the states we will never resort to store bought sauce again. Super easy and very tasty! Added some tabasco since we like the flavor in our shrimp sauce and used to add it back home, but aside from that followed recipe exactly.
