Chicken With Mushrooms

Used thick-cut Boars Head brand sharp provolone instead of the mozzarella and half white/baby bella mushrooms. It's our go to meal when we need something quick and we have no idea what to make for dinner.

Quinoa and Black Beans

Had an unexpected southwestern flavor to it. Surprising but very good. Instead of chopping the onion, I added onion chunks and the garlic to chicken broth and pureed in the magic bullet; separated the solids from the broth and cooked according to directions. At the end, I found my quinoa still too firm so I added more chicken broth at the end and simmered until tender. Only used half the black beans recommended and added chopped sauteed mushrooms. Delicious. Husband really liked it.

Quinoa with Mushrooms

Second time making this I modified by using shallots instead of onion and upping the garlic significantly. I pureed the shallots and garlic in the broth using the magic bullet blender then strained out the solids and cooked as directed. This gave the broth MUCH needed flavor that was lacking when I made this the first time.

Muffin Frittatas

Delicious! I sub out the veggies and use bacon and/or sausage instead. They reheat fabulously. Cleaning the muffin tin.... huge pain but these are great and worth the scrubbing.

Creamy Shrimp Scampi

Very good. I used pino grigio instead of the chardonnay and added diced roma tomatoes to the sauce. Next time I will up the garlic and shallots for more flavor. Overall this was a very delicious dish.

Gyoza Sauce

Fantastic! I cut down the vinegar to 1/3 of a cup based on another review and served them with Trader Joe's cucumber won tons. The recipe made WAY more than we needed but was very delicious! thank you :)
