Traditional Beef Burritos

Wonderful recipe!! Just as it is is really good, but then I tried it with "Slow Cooker Shredded Beef for Tacos and Burritos" in place of the gr. beef mixture. Oh man! Not quick, but so, so delicious. Rivals "Tito's Tacos" burritos in Culver City (don't know if it's still there, but was a childhood fav.

Black Beans and Rice

I made this recipe two nights ago...I did change it to the following: Step 1 remained the same. For step 2 I added chicken broth (slightly more than 1 1/2 cups), a can of whole kernel corn, a can of Rotel tomatoes (with green peppers) and two cans of black beans, one Ranch style and one plain. Here's the weird thing...I added the suggested spices, but when I tasted it, it really lacked salt to me. So I added salt to taste. When it was all done it was hotter than hell!! So next time I will omit the cayenne altogether...the heat from the Rotel is enough. After a couple of days, the heat has dissipated and today (the 3rd day) it is absolute perfect. Wonderful, delicious, inexpensive meal. Yummy!

Classic Meatloaf

O. M. G....the best meatloaf I've ever made! Moist and a perfect balance of flavors. If I stopped the review here, it would be correct, so this other stuff is just me... I only used 2 lbs. of good quality ground beef - 80/20 blend. Using only 2 lbs. of meat *may* have cut down on the cohesion factor, but it wasn't too bad. I doubled the recipe for the glaze except for the brown sugar, which I halved. I used half yellow mustard and half spicy brown (because I didn't have Dijon). I used Crystal's hot sauce, but only a little. It turned out great. It really is very important to get the vegetables "finely chopped, almost to a puree" because this is the key to a lot of the flavor and the moisture. If your food processor is up to the job, that's great, but I had some pieces that didn't get chopped as well and and stuck them in there anyway. That was a mistake. (Hate food processors! I guess they're a necessary evil for some things...) I used Italian flavored bread crumbs and cooked this for 1 hr, 15 minutes. This recipe is a keeper! Can't wait for the sandwiches I'll make later this week.

Slow Cooker Cranberry Roast

I used a rump roast and the meat turned out wonderfully. I couldn't get past the sweet gravy, though. I really wasn't a fan of this gravy on mashed potatoes. If you like the combination of sweetness and beef, this recipe is great. I probably wouldn't try this again, but do realize it would be to some people's taste.

Good Lord...sour enough to make pig squeal!! Had quite the alum face initially until I added quite a bit of honey, then it was okay...texture and color were nice.
