Eggplant Rounds

Excellent recipe. I did not find these oily at all, and would recommend keeping the heat med-high to avoid that. They could use a little more salt, and I am not a big salt "adder" normally, so you could just add later to taste. I also used 1/2 panko and 1/2 cornmeal, and the texture was even better than just plain cornmeal. Beefing up the oregano and chili powder helps a little with the overall taste.

Grilled Beer Chicken

OMG -this was awsome! I've never tried the "other" beer can chicken, but will definitely make this again. There are only 2 of us, so I made 1/2 chicken, and just halved the recipe for the marinade. I also minced a large garlic clove and added it to the beer/butter mixture (on top of the garlic powder) since I have a gas grill, and throwing garlic on the coals is not an option.

Greek Orzo with Feta

This was very tasty. I added some chopped mint to mine as well as chopped cucumber. I thought it was a wee lemony, so will increase olive oil and decrease lemon juice next time.

Baked Scallops

These are so tasty. I use panko in place of the dry bread crumbs, and I think it adds just that little bit of extra crunch to the topping. I have not added the garlic to the butter before, but that sounds like the bomb to make this even tastier!

I wasn't impressed. This recipe was too darn sweet. I think I'll stay with my old recipe from my dog-eared Betty Crocker cookbook.

Apricot-Mustard Grilled Pork Tenderloin

I thought this recipe sounded delicious, but found that all I could taste was the mustard. I used honey-mustard, but event that didn't help it. Will not make again
