Spaghetti Pie I

Delicious and a great way to use leftover spaghetti noodles. Love using cottage cheese (healthy way to add protein). I omitted the green pepper - I know most recipes for spaghetti pie have green pepper but the taste is too strong. Super yummy and a new comfort food favorite!

Make Ahead Breakfast Casserole

Everyone loved this casserole and it was very easy to make. I would add more vegetables next time (zucchini?) and not use seasoned breadcrumbs (made it way too salty).

Mexican Bean Salad

Delicious variation of a three bean salad. Love the spice and kick in this side dish. It is a HUGE recipe and doesn't keep well for more than 24 hours. But, for a big party, this is perfect -- it's tasty and presents beautifully.

Blueberry Coffee Cake III

I've been baking for my husband throughout our 20 year marriage. He says this is the best thing I have ever baked. Used toasted walnuts instead of pecans and added about 1/2 cup oatmeal to crumb topping to give it more substance. Lasts for a week if you keep in fridge; just pop in microwave for 15 seconds before eating.

Chicken Tortilla Bake

Icky, cheesy, gooey mess ... but I live in California and have high expectations for Mexican food. This is definitely not Mexican. I was able to salvage this meal somewhat because I plated each serving on a bed of shredded lettuce and top with fresh tomatoes, green onions and sour cream. I should've gone with my instincts and omitted the cream of mushroom soup and added a can of diced tomatoes. I will also back off on the cheese next time and sprinkle crushed tortilla chips on top.

Slow Cooker Texas Pulled Pork

Pretty darn easy, pretty darn tasty. Definitely have bbq sauce on the side (as pictured) as most folks like that extra kick on their sandwich. But it's not because the pork lacks flavor. After about 5 hours, I had to cut the hunk of meat into smaller pieces as it wasn't cooking as quickly. Otherwise, cooked as outlined in the recipe. It was a big hit.

World's Best Lasagna

Good, not great, and there are so many lasagna recipes out there I doubt I will try this one again. Especially because it is a lot of work and honestly, you can get as much (or more) flavor from a jar of spaghetti sauce. Just add fresh garlic and basil to liven up the flavor and no one will know the difference.

Rolled Flank Steak

I found this recipe and my girlfriend made it for our New Year's Eve dinner. It was DELICIOUS and beautiful! She said it was pretty easy to make, too. Definitely keeping this recipe in the mix, especially for entertaining! Thanks for a great addition to my book!

Banana Cream Pie I

I've made a better banana cream pie before but can't find the recipe. I was hoping this one would be comparable and its good but not fantastic. And, the recipe says to bake for 15 minutes which I thought completely wacky for a cream pie! I read some of the reviews that said not to bake. Everything is already cooked, that does not make any sense! Also, I typically mix the bananas into the custard and this one says to lay at bottom of crust and pour custard over, which I did. I prefer to mix the bananas into the custard.

Chicken With Mushrooms

Chicken broth is not gravy. Found this to be pretty unremarkable recipe for chicken but perhaps I didn't make it right because everyone else seems to love it. I had also added slices of ham between the chicken and cheese because I anticipated the flavor profile to be pretty blah. BUT ... I drained off the chicken broth after cooking and saved the rest. Made panini sandwiches on focaccia bread and it was a huge hit. So, 2 stars for dinner but 5 for lunch! :)

Tom Ka Gai (Coconut Chicken Soup)

My husband really enjoyed this soup but the rest of my family did not. The coconut milk was really heavy; I prefer a much more broth-ier version of this soup. I couldn't find light coconut milk in my store or I would've used that. Next time, I'll add a can of chicken stock and a can of coconut milk instead of two cans of coconut milk.

Chicken Pot Pie IX

YUM! Added one potato and another 1/2 pound chicken. This is the best chicken pot pie recipe I've made. So simple and so delicious. I'd give it more than 5 stars if I could, it was that good!

Pesto Pasta with Chicken

Tasty but not enough chicken for my meat-eating family. So next time, I will be sure to double the amount of chicken used and maybe add some spinach. Otherwise, the flavor was delicious and everyone loved it.
