Downeast Maine Pumpkin Bread

Excellent. I subbed 1/4 cup applesauce for one of the eggs and 1 cup brown sugar for one of the cups of white sugar. Delicious. Perfectly divided into 3 small (disposable, about 7"long x 4"wide) aluminum bake pans. Put chocolate chips in one of them for the chocolate lovers in my house. YUMMMM! Great dairy-free recipe with no butter.

Cornbread Muffins II

When I read that the oven temp was 450 I was skeptical but went ahead with it anyway. of course the muffins came out a little burned. Next time I would cook at a lower temp for longer. Could use more sweetness. Used rice milk instead of buttermilk due to allergy. Taste was pretty good.

Slow Cooker Cassoulet

Eh.. this was fair - I thought it was relatively decent, but my husband yucked at it. I used chorizo as was suggested in a review... it gave a nice smoky flavor but it got very crumbly, almost sawdusty weird texture. Here are some changes I made: during the last 2 or so hours of cooking, I threw a package of frozen potato-onion pierogies on top of the mix to add in a carb. Also I served it with crispy french fried onions when i plated it up. I didn't have parsely so I used fresh rosemary as the cooking spice and added some italian seasoning. Here's what I would do if I make this again (which honestly I doubt I will..): instead of using actual sausage, I would suggest a nice smoky ham bone... and for some reason I kept thinking this was crying for okra. I would suggest adding maybe a tad more liquid too.

Irresistible Irish Soda Bread

Really, really delicious. I didn't have buttermilk so I used 2c. milk with 2T. vinegar. I added about 1 cup yellow raisins to the batter and about 1t. fennel seeds. I also sprinkled green colored sugar all over the top before I baked it. Festive and yummy! Really good warm with butter....

Mary Anne's Moist and Nutty Carrot Loaf

This is awesome - incredibly moist. I took the suggestion of other reviews and used half brown sugar. I also used half whole wheat flour and added some flax meal. I used yellow raisins, omitted the nuts, and did not drain the crushed pineapple. Oh and I threw in a little powdered ginger, which is a great flavor paired with carrots. A real keeper, delicious!!!!

Baked Ziti IV

This was delicious! I didn't have sour cream so I used a full 16-oz container of 'creamy' lowfat cottage cheese instead. Also I used provolone instead of mozzarella both in the middle layer and on top. I added in some fresh chopped parsley and chunks of leftover meatballs. Very creamy and delicious. I had to cook it a bit longer than the instructions said, more like 45 mins. Deeeeelicious!!!!

Favorite Peanut Butter Cookies

Mmmm! Really good. I substituted sunflower butter for the peanut butter due to allergies in my family. Watch the temp/cooking time (maybe reduce a bit so they don't burn).

Sugar Cookies IX

These were terrific. I used unsalted margarine instead of butter. After mixing the wet ingredients with a hand blender, I had to knead in the flour/dry ingredients with my hands because the mixture was just too thick for a spoon. I rolled them into balls and baked at 350. Took a little longer than 12 minutes, but I did make large-ish balls of dough on the trays. These cookies are absolutely excellent. They are soft when they first come out of the oven but quickly become hard and crunchy.

Slow Cooker Stuffing

This was just terrific. I didn't add the mushrooms, and I didn't find that this was too wet. I am thinking maybe some of the problems other reviewers had with the stuffing being too wet (and thus having to add less broth) might be because of all the extra liquid the mushrooms would add. I did the recipe exactly as written with the exception of not adding mushrooms. I cooked it in the slow cooker for about 8 hours; I could've served it much sooner however because it was 'done' at probably 4-5 hours - those extra few hours just allowed it to get deeper in color, maybe a little mushier and the edges crisped up a bit. Good stuff, would definitely do this again, absolutely.

White Chocolate Orange Cookies

These were interesting. Good but a little odd. Batter was very thick - I added about 2-3 tablespoons of vegetable oil. They don't spread much at all when they cook but they do flatten out a little. I would've called them 'orange creamsicle cookies'. My husband said would've been better with regular chocolate instead of white chocolate. My son liked them. Not sure I'd make these again...

Michelle's Coconut Chicken Curry

I really enjoyed this. I added about 1/4 c of brown sugar and threw in a can of lentils too. Sauce was a little liquidy in my opinion...i probably added a little too much stock. My husband HATED this though--but that's because he despises curry! So only try this if you actually like curry (which i really really do!). Yum!

Slow Cooker Spaghetti Chicken

Yummy! Super easy! Instead of fresh chicken breasts I used a couple of cans of canned chicken...gave the whole thing a little bit of a tuna noodle kind of flavor. We enjoyed it.

Antipasto Squares

This was awesome. I made two changes - I used 6 eggs instead of 3 and I added a layer of caponata (italian eggplant/olive spread). I really liked the caponata but the egg part still needed tweaking. I think next time instead of adding the raw eggs I'll add in a layer of sliced hardboiled eggs. Also, don't make this the day before - though it tasted good the texture was all wrong. Best served fresh. Really really delicious!

Thanksgiving Meatloaf

This was quite good. Very moist and flavorful. But I agree with some of the other reviewers, it needed some veggies -- I put onion in mine and it was good. Next time I'll probably add celery and/or carrot as well. Served with turkey gravy (and ketchup for dipping!).

Peppermint Brittle

This was EXCELLENT and SUPER EASY. Very kid-friendly if you have little chefs in the house. I used a mixture of green (spearmint) and red (peppermint) starlight mints crushed up. And I used melted white chocolate chips b/c I couldn't find white bars. It's so festive-looking and really delicious!

OMG if I could give this 100 stars I would. AMAZING!!!! I used decaf french roast coffee beans and dark chocolate. I did not put the white chocolate on top. Also I spread it onto foil instead of wax paper. This was so so so so so so good. And SUPER easy!!!

Incredibly Cheesy Turkey Meatloaf

This was pretty good. I liked the chunks of cheese in it. I would've called it 'turkey cheeseburger meatloaf'. The oils from the cheese seeped out the edges/bottom and gave a nice crispiness to the outside edges of the loaf. My only changes were adding some additional herbs, a small chopped onion and I used cheddar cheese.
