I have 1 grown son, a beautiful daughter-in-love and 4 grandchildren. Fitness is my passion as well as cooking, for a wonderful supportive husband.
My favorite things to cook
I love to cook mexican and italian. New crockpot recipes interest me as well as anything with results that intrigue me. I love fixing magazine recipes... just for the diversity.
My cooking tragedies
My mother-in-law early in my adulthood, needed to run an errand and asked me to watch the soup beans and not let them cook dry. I watched and stirred. They continued to get thicker and dryer so I kept stirring so they wouldn't stick. She came back in just enough time to save them... who knew I was supposed to add water? Not me!!!!

Butterscotch Bread Pudding
Whenever we go out to a buffet for dinner, I always get the bread pudding. It is my favorite dessert. This recipe is the best I've ever tasted! I used heavy whipping cream for the milk simply because I was trying to use it up. That is the only thing that kept me from eating a rediculous amount. (thinking about the calories) Anyway this is fantastic. Even better straight from the fridge the next day!

Rum Sauce
This is a quick and easy sauce to make. I did it exactly as the recipe said. It has a strong rum flavor as it is added at the end. So adjust according to your preference. We enjoyed it. I had bicardi on hand so thats the kind I used.

Southwestern Chicken Lasagna
This is a tasty mexican casserole. Since you only use a partial jar of pasta sauce, I put some in the bottom of the casserole dish and the remainder on the top after layering. (just before the cheddar) Once you make this, you will be inspired to add your own flare as this is a very versitile delicious dish. Thanks Mike for sharing.
