Cambodian Ginger Catfish
Quite a tasty dish! We toned down the ginger for our North American palates, so used only about 1/3 of what they ask. My wife lived in Cambodia for a few years and could take lots of ginger then, but she was happy to tone it down too, since she isn't used to so much any more. I found that I ate a lot more rice with it than I would with other fish dishes, as the dish is quite potent. My wife said that is also typical of how Cambodians eat, very small portions of (extremely flavourful) meat and a LOT of rice with it.

Broiled Tilapia Parmesan
Fantastic flavour! I made this with Basa fish, since that is what I had on hand, and the butter, parmesan, and lemon mixture was wonderful! I did have to pretty much double the cooking times, since my fish was still half frozen, and I think my Basa filets may be thicker than the Tilapia would have been. However, it still came out beautifully! I have a feeling I'm going to be eating fish more often!

Simple and Easy Stuffed Peppers
Very easy way to do stuffed peppers. I will probably spice up the beef a bit more next time, and put more veggies in it, like mushrooms.
