Banana Banana Bread

I love the chunks of banana that are in this bread. I only somewhat mashed them and literally just mixed until all the flour was mixed in. Threw some oats on top and mixed in some walnuts... DELICIOUS!

Baked Zucchini Chips

These are fantastic, but I also had a little problem with them turning in actual CHIPS but they were still good not quite as crispy.

Buffalo Chicken Fingers

I actually marinated them in a texas pete buffalo chicken wing hot sauce for about two hours before hand. The breading was a little fragile but these were absolutely amazing. my husband is having me put this on the "definitely make again soon" list.

Chocolate Wave Zucchini Bread

Absolutely delicious. I didn't use quite as much chocolate chips and I subsituted pecans because I didn't have walnuts. I thought it was very moist. Next time I might add both nuts just because I like more crunch.

Homemade Black Bean Veggie Burgers

It had a re-fried beans consistency even after doubling the amount of bread crumbs I used. Next time I will definitely add some rice to the patties to give it a different texture. The taste was great, I didn't have chili powder in my cabinet so I made my own and added a touch of cayanne.

Spooky Witches' Fingers

These little fingers were a hit! I would try to use a honey roasted almond next time to give the cookie a little more sweetness, but they were awesome as is. Just make sure that you keep the pre-baked form smaller than a real finger because they will absolutely expand.

Pumpkin Spiced Latte

When I first made this we had to use apple pie spice instead, and we added some cinnamon. It was amazing. When I replenished my pumpkin pie spice, it was even better. We would only made a cup at a time and now I don't even use the blender. Just heat the milk in a coffee mug and add the rest.

American Lasagna

Absolutely Delicious! My husband and I made this dish together and we used dried basil instead of fresh. We used more ricotta and parmesan because we love the extra cheese. The left overs were just as yummy the next day AND the day after.
