Pasta Primavera with Italian Turkey Sausage

This was excellent! I used much less sausage because I don't eat much meat and omitted the red pepper because I have a little one. I cut the pasta to 6 oz. (scaled to 4 servings) but will cut it to 4 oz when I make it again.

Chicken and Ham Casserole

This was a great way to use leftovers. I thought the portions were rather small. I added peas and mushrooms to the mix, increased the amount of meat, made an additional cup of white sauce, and made more noodles.

This was an excellent recipe! I prepared the ingredients in advance so cooking was a breeze. I used baby carrots and "chipped" them in a salad shooter.

Scalloped Tomatoes

These were excellent! I used store bought "vine ripened" tomatoes and they came out great. I am sure they would be even better with home grown tomatoes.

Connie's Zucchini "Crab" Cakes

I thought these zucchini cakes were great! I doubled the Old Bay seasoning and think I will increase it again the next time I make them. I also put the shreaded zucchini in a colander and salted it and weighted it with a bowl to remove the liquid.

Easy Coq Au Vin
