Pork with Peach and Black Bean Salsa

Reviewed: Aug. 27, 2010
Why would anyone rate a dish that they didn't make and give it 3 stars because it included an ingredient they don't like. I'll go with 5 stars because it sounds delicious and it will balance out the other reviewer's low rating!

Deb's Scallops Florentine

Outstanding! Use 2x the spinach, nutmeg in the sauce,3/4 cup skim milk and 1/4 cup 1/2 and 1/2 instead of heavy cream. Mix the spinach into the sauce and pour over scallops. No need to parboil the scallops, either.

Barbequed Steelhead Trout

Reviewed: Jan. 29, 2010
1st time eating steelhead trout and I'm not a big fish lover, but trying to like it more. This was delicious, not at all fishy tasting. The barbeue sauce at the end was subtle and gave a great taste. My husband, who loves all kinds of fish, thoroughly enjoyed this and said we will have to make it again! Thank you for the recipe.

Pasta with Pesto and Scallops

Reviewed: Jun. 19, 2009
Delicious I made this w/ no green peppers as I don't care for them, otherwise followed the recipe to a T. It's a keeper! Made the pesto fresh from my herb garden. Thank you for the recipe.

Garlic Prime Rib

Reviewed: Dec. 31, 2008
Have used this rub at least 5 times and every time is perfect I grill it by putting the roast in a disposable aluminum pan and searing top and bottom about 10 min a side on a very hot grill. Then turn roast fat side up and turn heat down to med low and cook til middle registers 130 deg. (cover is always used on the grill) Tent meat about 20 min with foil then slice and enjoy. Thanks for a great recipe!!

Make-Ahead Mashed Potatoes

excellent recipe try adding a pat or 2 of butter when putting in baking dish when you heat them up, the butter disperses thru the dish and a quick stir helps too.

Butternut Squash Soup

Reviewed: Nov. 10, 2005
This is a winner!Q My husband said it was about the best soup he ever ate (and he's been around a long time). I used 2 pkgs of peeled and cut squash from Wegmans net wt 20 oz each and adjusted the broth proportionately to about 4 1/2 cups used 1 cream cheese, blended everything w/ an immersion blender and seasoned to taste Thanks, Mary

Haddock Au Gratin

A wonderful change of pace for haddock. Will definitely make again!!! No need to change anything in the recipe, but you could use milk instead of cream to save some calories as I did and the sauce thickened up just fine. Thanks for sharing!!

Award Winning Chili

Reviewed: Jan. 24, 2004
This was a hit in my family We are not big chili lovers, but the flavors in this chiuli blended nicely spicy and w/ good flavor, but not too hot. I doubled the recipe using 3 cans of beans instead of 2 and used 2 pkg of chili seasoning 1 hot and 1 texas flavored otherwise pretty much used the recipe as stated The white wine adds a bit of a difference I used chardonnay Am making again today by request Thanks Jennifer

Crab Stuffed Flounder

Reviewed: Mar. 15, 2003
Absolutely fantastic recipe. Coming from a very picky fish eater, this is very high praise. The fish was moist-not overdone with the suggested cooking times. I cheated and used a ready made cajun crab dip from the market, but made the top layer exactly as instructed DELICIOUS!! Definitely will make again, even when Lent is over!
