Awesome Honey Pecan Pork Chops

This was definately an awesome recipe. We used a bit more honey and almonds instead of pecans and it was really a treat. We are definately adding this simple, elegant dish to our rotation!

Banana Pumpkin Bread

Excellent Bread. Like other reviewers, I added an extra banana, used 1c. whole wheat flour, and substituted brown sugar for the honey. I made muffins with this recipe and they were very moist!

Pumpkin Coconut Muffins with Chocolate Chips

I made these last night on a snow day and they turned out great. I used the big muffin pans and increased the baking time. I also added some toasted chopped walnuts to the top for something extra. Would definately make again.

Banana Peanut Butter Bread

Very good recipe. I made large muffins - this recipe made 6 large muffins. I followed others' suggestions and increased the pb to 3/4 cup and decreased the flour by 1/4 cup. I used 1 cup white flour and 3/4 cup ww flour. Turned out great! I also added choc chips. Would make again.

Chocolate Chip Banana Muffins

I have to say that I almost didn't end up baking these muffins after I tasted the batter - but I am so glad that I did! Like some others, I used 1/2 applesauce and 1/2 canola oil. I also added a few spoonfulls of peanut butter (why not!?) and added some sugar in the raw on the top for an extra crunch. Excellent muffins that I will definately make again. I also used a slightly larger pan (6 jubmo muffins) and cooked for 20 minutes - which was way too long. Will shorten next time.

Lighter Banana Muffins

This muffin is a bit dry, even after adding skim milk. The flavor is also a bit off - I added an extra banana, vanilla and choc chips as some reviewers suggested, but I can tell it is low-fat. Probably will not make again.
