Stabilized Whipped Cream Icing

Definitely the most stable whipped cream I've ever made. If using in a layered cake, after applying cream, let the creamed cake set in the fridge for several hours or overnight before serving. The cream will hold onto the cake better when slicing.

Asian Pork Burger

Didn't have cider, so used apple juice instead. I added 1Tbsp fresh ginger instead of powder, and 1tsp garlic. Pan fried the patties 4-5 minutes per side. Served the moist patties with rice and veggies on the side. The pork patties were tasty, but not overpowering in any way. Everyone liked it, even the son who dislikes onions and bell peppers. Made extras for the freezer too!

Strawberry Cake Filling

I used this filling to top off cream cheese filled prebaked tart shells. Reduced the water in this recipe to 3/4 cup, used frozen, whole local strawberries, and kept the rest of the recipe the same. The result was the perfect quick dessert!

Chia Seed Jam

Cherry Cobbler I

Decreased the sugar to 3/4 cup (just right for the sweetness) but still way too r unny. Needs more thickener, perhaps 1.5-2X the cornstarch depending on the type of cherries you use, otherwise decrease the water would make it better. You can actually drain the liquid out after baking (very messy!), add more corn starch to the liquid and pour it over the topping, but you'd have to rebake it all over again. I did just that and managed to salvage the dessert. Everyone enjoyed it!

Whole Grain Breakfast Cookies

Good protein and fibre cookie. Filling and pleasing to children and adults. Tends to be a little on the dry and crumbly side, but that's to be expected of cookies made with a nut (or seed) butter. A good school snack idea.

Turkey-Lentil Chili

As one son said: Doesn't look that good, but tastes yummy. Used turkey broth and ground turkey, and therefore multiplied the garlic and rest of spices by 1.5 and added 1.5 tsp of chilli powder. Added 2 tsp of sea salt. Still fairly mild but just right for the range of tastes for my family.

Buttermilk Pie Crust

Works really well. Pulsed everything in a food processor until a dough ball formed. Used only butter. Chill dough 30 minutes before handling for easier rolling between sheets of wax paper or parchment.

Slow Cooker Adobo Chicken with Bok Choy

The vinegar taste was too strong. Had to add 2 more tablespoons of sugar to balance the flavours and make it palatable. I've made Adobo chicken with a Filipino friend before, and it didn't taste like the Adobo chicken in this recipe.

Smokey Parmesan Sweet Potato Chips

Followed the recipe to the T. This recipe has too much spice (not that it tasted spicy, just not the right balance of flavors). The time and temperature must be off a bit because my chips were burning at half time! Maybe the stated time/temp would have been better for fries?

Easy Decadent Truffles

Very easy to make and adaptable. Smooth, and rich flavor. I flavored the truffles with ice wine, and later dipped the formed and chilled truffles in a good quality dark chocolate. The results? Move over Godiva!

Chocolate Almond Pumpkin Bread

Nice, smooth texture, moderate spice and easy to make. I combined all the dry ingredients and added the mixed wet ingredients (this includes the sugar), mixing until smooth. Omitted the almonds, and folded in the chocolate chips. These make good muffins as well as mini loaves. An delightful fall treat!
