Granola Bars III

I made the recipe with only minor changes (didn't have wheat germ and I threw in some pumpkin seeds, sesame seeds, and substituted dried cranberries for raisins). Even though I reduced the brown sugar a bit, I still found it too sweet for my tastes (which is often the case). Next time, I'll cut down to 1/4 cup and reduce the honey a bit too. A good base recipe that I can now tweak.

Asparagus Lasagna

This was pretty good for being so easy! Added a green salad and some fresh rolls to complete it. I'll definitely make it again. Not *quite* 5 stars... it was missing a little something to make it spectacular.. not sure what though, I'll have to experiment. But into the recipe box it goes!!

Lemon Cream Cheese Frosting

Mmmm... lemony.. with zing! I drastically reduced the sugar (I just starting adding sugar gradually until it was as sweet as I wanted it to be). I'll be making this again for sure!

Beer Bread I

I stole a can of my boyfriend's super cheap beer and this was awesome. I put in 1/3 cup sugar, and that was a bit much. Next time I'll use half that. This was SO tasty with dinner.

Cranberry, Sausage and Apple Stuffing

I substituted onions for leeks, and I actually forgot to buy cranberries, but this was still one of the best stuffings I've had. This will be made again and again in my house!

Jambalaya

Took forever for all the liquid to absorb into the rice, so it ended up a little mushy. Next time I think I'll cook the rice separately. Either way, it tasted just GREAT, mushy or not! A keeper for sure!

Pork Chops with Apples, Onions, and Sweet Potatoes

This turned out SUPER!! I used MacIntosh apples, and only half of the pepper; I also drained out the watery fat halfway through baking. Oh, and I used regular potatoes since that's what I had.. this was AWESOME!! The meat was so tender and tasty, and the apples and onions blended rather nicely... This is *so* easy and good this will be in my "easy weeknight favorites" rotation!!

Italian Sausage Soup

This is one of my new favorites!! I don't like zucchini, and my boyfriend isn't a soup fan, but we gobbled this up like it was going out of style. To reduce the fat, I drained the sausage on paper towels before adding the tomatoes and broth. I also added 1/2 cup orzo pasta (which MADE this soup for me). it was SOOOOO good... this is definitely a tasty way to eat veggies!!

Old Fashioned Paradise Pumpkin Pie

After having pretty much sworn off pumpkin pie (had a few too many store-bought ones growing up), I made this and I was impressed!! Cheesecake and pumpkin pie all in one... does it *get* any better?? I didn't have any problems with the two layers mixing, and the streusel layer is the thing that takes this from a really good pie to a really great pie! Definitely making this again!!

Butternut Squash Soup

I made this for Thanksgiving last year and my guests have been raving about it ever since (and insisting that I make it again this year). I roasted the squash beforehand and used just 1/2 a block of light cream cheese and it turned out just right. I have a newfound appreciation for squash!!
