Soul Smothered Chicken

This is amazing. My husband told me I better put this in my recipe box right now so I dont forget about it. I saw that some people had a hard time with the directions so this is what I did. I seasoned my flour with Tonys and left out the salt and pepper. I browned my chicken in the butter but did not drain it before I added the veggies. Then I added my flour 1 tbsp at a time then stir until it makes a paste then add chicken broth slowly 1/4 c at a time then add chicken and bring to a boil. Cook about 45 minutes. Also for those of you that dont like meat on the bone I would suggest buying split breasts and removing the breast and skin yourself and add the bons when you start the gravy that way you still get the flavor the bone gives off. It really does make a difference.

Sour Cream Enchiladas

I've been making this for years and the only thing missing is I add cilantro to the soup mx. Probably about a handful. It completly makes the meal. I also shred my chicken instead of cubing it.

Chicken with Herb Sauce

Very good. Made a few changes. Seasoned my chicken with Tonys then cooked it. When it was done I added the oil, butter and chicken broth to the pan and I added about 8 sliced mushrooms and 4 cloves of garlic, minced and let them cook then added the herbs. I used much more basil and rosemary instead of parsley (I just dont like it). Then I added a cup more of the broth and mixed cornstarch in it to make a thicker sauce and served it all over pasta. This was wonderful. The mushrooms really make the meal.

Cherry Tomatoes Filled with Goat Cheese

I just made a quick bunch of these and I didnt have goat cheese (which I will try) but I used feta and it worked well. I didnt add salt to the mix but I did sprinkle some kosher salt on after. I also drizzled with olive oil when I was done then rolled them around to get it all over them. I also used a paring knife and that was perfect. Verg good and cant wait to try with goat cheese.

Southern Chicken and Dumplings

Awesome recipe. First time making dumplings from scratch and they came out very good. My husband said it tastes just like his grandmas except she didnt take the chicken off the bone just served it whole in the soup.. I think I will do that next time.

Baked Buffalo Wings

This is a great recipe. Only changes I made was to use Tonys instead of cayanne and salt and I baked 15 min on each side THEN I dipped them in the sauce put them back in the oven for 15 minutes and they were perfect. Tender, juicy and had a great flavor. Oh and I used Cholula hotsauce instead of Franks (my husband doesnt like it.)

Mini Ham And Cheese Rolls

I made these for a family lunch we had (about 10 ppl) and everyone LOVED them. I did add garlic powder and onion powder. I brushed the insides with the sauce and made some with provalone and some with swiss. Also 12 with regular rolls and some with hawaiian rolls. I also ended up making an extra batch of the mixture to brush on the top. I made them the night before and cooked them at my grandmas house when I got there.

Quesadilla Jalapeno Spread

I used bananna peppers bc thats what I had and added a bit more juice from the jar. More cayanne and added onion powder. Very tasty on my cheese quesadilla.

Yummy Roll Ups

I made this as is except I used salami bc thats what I had. I added some fresh dill along with the pickle and it was sooo good. You can do so many things to the cream cheese for a party trey and have several options for people. These are very easy to make too.

Deep South Fried Chicken

This fried chicken was much easier to make then I thought it would be. I added cajun seasoning and garlic powder to the flour instead of salt and pepper. I think I might flip half way through next time. I didnt use a cast iron skillet but I will try it next time. Delicious!!

Chicken Breasts with Herb Basting Sauce

This is delicious. I did use different herbs to use what i had (rosemary, basil, mrs dash herb blend0 and used about 3 tbsp of garlic. I also seasoned the meat with cajun seasoning and a touch of lemon pepper. I also cooked a whole onion with it bc I didnt read the ingredients right. I added 3 tbsp of melted butter and a can of mushrooms to the pan. Cooked covered for 30 min then uncovered for 20. My hubsband couldnt stop raving about how good it was. Tonight with the leftovers I am making gravy with the pan drippings and pour it over some ratoni pasta and shred the leftover chicken to go in it.

Basic Corn Muffins

This is a very good basic recipe. I was out of Jiffy and wanted to make some mexican cornbread and that is what I usually use but not anymore :) Now since I was adding cheese, jalapenos and corn so I changed some things up a bit. I added an extra egg, vegetable oil instead of canola, 2 cups cheddar cheese, one can diced jalapeno peppers (next time I will use whole pickled ones). Most recipies for mexican cornbread call for creamed corn but I just dont like it so I added 3 big spoonfulls of sour cream to make up for the creamed part. I served this with some spicy pinto beans and it was delicious. If I wasnt adding the cheese and stuff I would have only used one egg. These were really easy to make and with ingredients I always have on hand. Thanks for the recipe!

Mama's Best Broiled Tomato Sandwich

Made this on garlic 4 cheese Texas toast and just put the mayo/parm mix on top of the cheese after I toasted the toast. I added freeze dried basil but fresh would be better and added parmesean on top of the tomatoes. It was very good! If you have someone who has to have a protien a quick fix is a fried egg in between the bread and tomatoes.

Ultimate Twice Baked Potatoes

Delicious! I did bake my bacon for 17 minutes on 375 to make it easier. Also instead of milk I added about 3 ounces of cream cheese. Also added garlic powder and more cheese just used the cup in the mix and topped with more cheese. I coudnt wait for the leftovers the next day!

Basic Crepes

This was very good and very easy. I did add 3 tbsp of sugar to it and cooked for 3 minutes per side. I made this cream cheese sauce and mixed in some raspberry jam and it was a good light dish to pair with buscuits and gravy.

Creamy Chipotle Chicken

Sooooo delicious! I made my own cream of chicken from this site using flour chicken broth and milk and some spices. Make your own if you can it was much better than canned. Also I openly used one big pepper bc I'm a wimp but I used all of the sauce in the jar and it was perfect. Still spicy but not too spicy. I also seasoned the chicken with fajita seasoning and cooked on the stove top then removed the chicken and made the sauce and threw the chicken back in. Also sauteed mushrooms and threw those in there. This is a must try!

Simple Carnitas

I juiced my oranges and threw in the peels. I also added 1/2 cup lime juice and some chili powder. I brought covered the rest with water and brought to a boil and cooked uncovered for 2 hours on low. Then brought up to medium and let the meat fry in its own fat. There will be some water left but it will dissolve give it about 30 to 45 min. You might have to take out some liquid like i did but reserve it in case you need to add it back. It was so good!

This is so good! I added a little sugar after cooking for 20 min and cooked it for 10 more minutes. Served it with feta and basil spread on crackers. Delicious!

Caprese Appetizer

Everyone loved this! Only thing I did different is use marinated mozzarella and I cut the tomatoes and mozzarella balls in half and drizzled with the marinade and sprinkled kosher salt. I made them the day before the party and they were perfect.
